Pumpkin season is here 🎃

RECIPE (4 servings, 35min prep time):
-1 butternut squash or your favorite pumpkin, halved and seeds removed
-1 head of garlic
Drizzle with oil and roast at 180C/360F for 25mins.
Then scoop out the flesh and squeeze the roasted garlic in a blender.
-2 cups (500ml) water or plant milk
-salt to taste
-2 Tsp paprika
-1 Tsp chili powder
-juice of 1/2 lemon
Blend until smooth
-375g pasta
Boil until al dente.
Mix pasta, the sauce and some pasta water, serve.

This short came on my feed today, I had to try it! I am dairy free and trying to go plant based. My family is not. I made this and they loved it, even my picky eater that does not like anything accept regular Mac and cheese. I loved it too. I added more seasoning, but it is a great recipe❤😊

It's specifically a butternut squash. It's a type of gourd, not a pumpkin, and it's naturally shaped like that!
Butternut squash soup is 👌 and I honestly never saw the shape as questionable! Guess people see stuff differently.

Tried this, honestly I need to try more recipes cause this was not really it. I followed the directions exactly but it did not really taste that good. I definitely think it’s because of the roasted squash as a base cause it’s flavor comes through and not in a good way or at least not to me. I personally wouldn’t recommend but if you like the flavor of squash than you might actually like this.
