- Silky Smooth Butternut squash and Sage Spaghetti, is the perfect dish for a vegetarian supper. In Australia and England, we call squash pumpkin, so this is a butternut pumpkin. I know, confusing!

PS - a sauce made with San Marzano or cherry tomato with butternut squash is also really tasty and a nice way to get more variety is your pasta!

A good idea to make something delicious from pumpkin. Attractively prepared. From me a LIKE. Unfortunately, I can't cook it because my wife doesn't like pumpkin. That's why I have "Kung Pao chicken" today, but I don't think that's the worst choice :)

A few tips here.
Cut the squash in smal pieces for more surface to be caramelized inside the oven
Infuse the oil with the sage and maybe use some fresh chilly but take them all out before adding the sauce, you can sprinkle them later
For pasta use something with a fresh texture a bit of flower on them, maybe make your own tagliatelle or parpadelle.
