Ingredients below ⬇️
Chocolate Cake
- 340g - buttermilk, room temperature
- 3 (135g) - eggs, room temperature
- 1 tsp - vanilla bean paste
- 170g - coconut oil, melted
- 600g - plain flour, sieved
- 600g - caster sugar
- 20g - bi-carbonate soda, sieved
- 1 ½ tsp - baking powder, sieved
- 155g - Dutch cocoa powder, sieved
- 1 ½ tsp (10g) - Maldon Sea Salt
- 340g - hot water
Chocolate Bunny Ears
- 115g - good-quality milk chocolate
- 1 tsp - water
Ganache Filling
- 1400g - good-quality milk chocolate
- 1 tsp - vanilla bean paste
- 1 tsp - ground cinnamon
- 580g - fresh cream 35% fat
Assembly
- ¼ tsp - gold metallic or gold lustre dust
- Maldon Sea Salt
- 10 - milk chocolate eggs, approximately 44mm in length.

Hi Kirsten! I just wanted to let you know that by watching your tutorials. It has gotten me super excited about working with chocolate. Finally I had successfully created a perfectly thin and snappy shell. Since I haven’t gone to pastry school, I am pretty proud about my laminated puff dough and laminated yeast dough. I have to say tempering has to be my nemesis, next to scratch cakes that is. I know it sounds crazy, but I do everything that the recipe calls for. Even the temps, order and mixing speeds along with times. The only issue is the final texture. The taste, color and even flat surface makes me feel like I am doing something right. It is just a grainy almost fine cornmeal consistency. I still haven’t tried this chocolate cake recipe, but it seems I am having more trouble with vanilla sponge or white cake. I am not sure if I am over or under mixing the batter. I think the reverse creaming method is what trips me up. Anyway, I am thinking pretty hard about joining your classes (I assume that they are virtual). I live in the US, have a family and full time job. Changing carriers later in life can be extremely challenging. I am 45 and would love to say “I love my job!”
