- Inspiration for gentle cozy autumn in English countryside - visiting a beautiful National Trust, a quaint village called Bibury in the Cotswolds and baking caramel apple cinnamon buns.
= Sticky Caramel Apple Cinnamon Bun recipe =
Dough:
360g plain flour (+ 2 tbsp at the end)
45g sugar
7g packet of dry activated yeast / or 2 1/2 tbsp
1/2 tsp salt (omit salt if using salted butter)
120g milk
75g unsalted butter (softened)
1 tsp Vanilla extract
1 egg
60g room temp water
Warm up your milk in the microwave for about 20 seconds - it should be warm to touch but not boiling hot. You should be able to touch it with the finger without burning yourself. If it's too hot let it cool down a little bit. To the warm milk add 1 tsp of sugar and a packet of yeast, mix. Let it sit for about 5 minutes - yeast will bubble up on top.
Combine flour, salt, the rest of your sugar. Make a little well in the middle and pour yeast milk, softened butter and vanilla - mix well. Add 1 egg, mix, then add water and knead your dough well. It will be very sticky in the beginning, so start by mixing with a spoon and then start mixing by hand. It will take about 8-10 minutes of light kneading for the dough to become less sticky.
Cover with a towel and let the dough rest in a warm place for 1-2h or until it doubles in size.
Filling:
60g softened butter
60g brown sugar
2 tbsp cinnamon
A handful of chopped pecans
1-2 small grated apples
In the meantime prepare the filling.
Mix sugar with cinnamon. Chop pecans. Grate 1-2 apples and squeeze out their juice.
Once the dough has risen, spread it into a rectangle about 1-2cm high. Spread a thin layer of softened butter on top. Sprinkle sugar, chopped pecans and grated apple. Roll the dough and cut the buns (about 4 finger wide). I had 8 buns in total.
Cover with a towel and let the buns rest for 30 mins to 1h in a warm place.
Preheat the oven to 180C/ 356F
Bake for 18 minutes.
Pour warm caramel sauce on top and sprinkle with extra pecans.
Best served warm :)

October is my birthday month. It starts out the holidays and birthdays of all of my family, culminating in Christmas and New Year. Small wonder that it is so special to me. Now if the weather would cooperate and quit being so summery.

Ooh autumn must be getting so beautiful where you are already! 🍂 Candles are such a guilty pleasure aren't they! I run out too fast, so I buy one probably about every week, trying to stick to the unscented ones as they are cheaper... I burn my scented ones sparingly! 😄

It’s so fascinating how different nature is in all the parts of the world! I miss beautiful golden autumn, unfortunately in England it comes much later and there aren’t that many yellow trees down south. I think there’s more up north in the UK so hopefully I’ll venture out there soon! 🍂

The smell of Autumn is definitely in the air. I so love it. A mix of wanting stay inside and be cozy and getting outside to witness all the beauty. I can’t get enough of it all as I always seem to want to do everything at the same time.
You’re sticky buns look amazing! I agree with you about the amount of sugar in store bought treats. Small amounts of something you really enjoy is the way to go.
It’s interesting what you said about your outfits. As I’ve matured, I have also changed what I’m comfortable in. I didn’t wear dresses so much when I was younger either. I now wear what I like, regardless of wear I’m going.

It's definitely worth a visit, such a charming village! Though I must say it is packed with people, so venturing out to the neighbouring streets and exploring a little bit outside might make it a more pleasant experience after taking all the pictures in Arlington Row! 🥰 Forests are magical at this time of year, aren't they! I live in a small town, but there are many small villages right in the mountains and there are many forests there. Yes! there are many mushrooms, the most common are the " Boletus Edulis "(I do not know the name in English, however they are very good) I hope I have been exhaustive in the answer, even if I don't know English very well 😅 hope you are doing well! There are tons of mushrooms all over England and this particular one is more common up north, though I know some people who found it in other areas. I’m so jealous, I love that type of mushroom! 😄
