YOGHURT BOWL WITH GRILLED PEACH & TOASTED OATS (Serves 2)
Coconut oil: amzn.to/39JpOK5*
1 cup rolled oats: amzn.to/2XcjDJP*
1/2 cup plant milk: amzn.to/312YylV*
1/4 tsp ground cinnamon
Pinch salt
Vegan yoghurt: bit.ly/2P6zZPE*
Peach, sliced into cubes
1 tbsp maple syrup: amzn.to/3jVlo7Q*
Melt the coconut oil in a flat plan on a medium heat then add in the jumbo oats. Toast those off for around 10 minutes until they start to turn slightly golden. Next, pour in the plant milk, add in the cinnamon and salt, the stir that together and continue cooking it through until the oats absorb all of the milk. De-stone and chop up the peach then add that to a separate frying pan and turn the peach through the pan to warm it through slightly. Drizzle in the maple syrup and then stir that through the peaches to get them all coated. Continue to cook them until they slightly caramelise and the maple syrup had thickened. Serve the toasted oats and caramelised peach with some vegan yoghurt.
SCRAMBLED SMOKED TOFU TOAST (Serves 2)
1 tbsp oil
1 block firm smoked tofu
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp onion granules
1/2 tsp garlic granules
Salt & pepper
2 tbsp vegan plain yoghurt: bit.ly/2P6zZPE*
1/4 tsp English (or Dijon) mustard
1/4 tsp kala namak: amzn.to/31132tj*
Fried mushrooms and tomatoes
Rye bread
Roughly break up the tofu and mash it with a fork to form a scramble. Add the tofu to a pan on a meduim heat then add in the turmeric, garlic granules, onion granules, paprika and then season with a little salt and a lot of black pepper. Turn all of the flavours through the tofu until evenly coloured and coated. Cook for around 5 minutes then turn off the heat and add in the vegan yoghurt, english mustard and kala namak. Give everything a good turn through the pan and make sure it was all well combined. Serve on toast with cooked tomatoes and mushrooms, sriracha and fresh dill.

VEG THAI RED CURRY (Serves 2)
1 tsp coconut oil: amzn.to/39JpOK5*
3 cloves garlic, sliced
1 thumb ginger, grated
Handful baby button mushrooms, halved
1 white onion, sliced
1 red and green pepper, chopped
3-4 tbsp vegan Thai Red Curry paste
1/4 red chilli, grated
1 can coconut milk: amzn.to/39Hoszx*
Handful baby corn
1 bok choi, chopped
1/4 cup fresh coriander, chopped
Juice 1 lime
Mr Organic Chickpea Rice [gift]: amzn.to/3jUojO7*
Melt the oil in a wok, then add in the garlic and ginger. Fry those in the oil for a couple of minutes, then add in the mushrooms. Cook the mushrooms until they develop a lovely colour, then add in the onion. Next, add in the bell peppers and cook everything in the pan off for a couple of minutes. Add in the Thai Red Curry Paste next and turn that through to get everything well coated. Grate in the red chilli, pour in the coconut milk and add in the baby corn. Give everything in the pan another good stir through until well mixed together and the sauce has a lovely red colour to it, and continue to cook for around 10 minutes. Add in the bok choi, along with some salt and black pepper and stir. Lastly, add in the chopped coriander and squeeze in the juice of half a lime, and give everything a good final stir through before serving the curry with rice. Finish with more lime juice and fresh coriander.

i love how you don’t use much frozen “processed” food in your recipes! it’s so refreshing to see wholesome meals that are filling and nutritious without the need for meat substitutes!

If you want creamy scrambled tofu you can also use soy milk! That works really well

The meals are all lovely. Thanks for your lovely presentation. But I could not eat so much in one day. However I have been advice to start vegan meals I have been cutting out meat for sometimes only having fish. But some times even fish turns you off. I hope I can manage to continue, both my sons are both vegans.

Excellent vegan recipes and video. There's alternatives to the red curry paste in some supermarkets because i know Tescos has their own version which is vegan and so is their green curry paste. Your what you eat in a day or week videos aren't boring even my food isn't because I am trying new recipes all the time.

Delicious recipes! Everytime I try to buy peaches over here, they are always white inside, especially from sainsburys. Where did you buy yours? 🤍
Thanks so much for watching! We get most of our fruit and veg from a local Eastern European supermarket since everything is loose/plastic-free and they have the best, most fresh produce! The peaches are incredible - worth checking similar supermarkets if you have any close to you! ☺️
How do you think the yogurt dish would hold up if layered in a jar?
It should work fine! I would do yoghurt in the bottom, then the oats then the peaches on top :-) X
I think with that Scramble for me. I would of done either Pinto Beans, or maybe even Chickpeas. I can't do Tofu. Grilled mushrooms and tomatoes oh yea. That yogurt looked so good. I so wish Or store would carry vegan yogurts. Melon has been so good this year. I let my last one get too wipe sighs. I think I can eat more fruit then Veggies at times. lol. But I love both. :) That Dessert looked so Yummy. Everything you make always look so good. :)

How did you get started with cooking and experimenting with different recipes?
I went vegan when I lived in Turkey and there were no vegan alternatives out there, so I had to learn to cook from scratch, but I grew up learning to cook at home as my parents cook everything from scratch. Cooking is like my therapy and I enjoy it so much so I just love to get in the kitchen and experiment :-) Thanks for watching! X

This all looks so delicious I just want to eat everything right now. 😅 But to be honest this looks like a lot of kitchen work in total. I have days where I can spend that much time, on others I am happy just to throw something into my lunch boxes and run away to work. I guess for those days the Monbento box will do better (it is on its way to me). And the portions are big, as I imagine. On the other hand you don’t seem to snack, so this could be a perfect way out of my personal “snack trap”. I always think it takes too much time to cook now or I am not hungry enough and then I end up with a bag of crisps, a bar of chocolate and/or some other treats. 🙈
Haha! It's probably because you see it condensed down into one video, but over the space of 16 hours of my day, it's not a lot of kitchen work and I never see cooking as a chore or time consuming! I used to snack SO MUCH when I first started working from home and I just got into a bad habit with it so now I prefer to have 3 hearty, wholesome and substantial meals and snack on fruit or a healthy snack if I feel hungry in between meals :-) Thanks so much for watching! Would the peaches and oats keep for a couple of days? It looks really tasty but I’d never have time to do this before work but if I could make it in advance that would be ideal ☺️
Yes absolutely! I'd recommend making them in a jar - yoghurt in the bottom, oats in the middle and the peaches on top - make sure it's airtight with a lid and use within 3 days. That way you could also take them to work with you too! :-) X

I'm curious but why wont the oats work with porridge oats? Why does it have to be jumbo oats?
It wouldn't work with porridge oats because once you add the milk it will just turn to porridge/a gloopy mess 😅 Jumbo oats absorb the liquid but hold their shape, which is why only jumbo oats will work! X

I got it in the health food store in Avoca, Dunboyne but I've seen it in almost every small health food shop, Nourish, Dunnes and Supervalu also stock the brand - it's called 'Thai Gold' :-) X

I would suggest buying firm tofu, such as Tofoo (found in most supermarkets, drain off any excess water!) and if not you need to press the tofu for a good hour. It's also all about marinating it and using lots of flavours, it's delicious when it's baked too :-) X
