      *sad german noises*... I beg you to at least once try german/european dark bread from a normal local bakery... Things like carrot- or potato bread are a special kind of "moist" and perfect bread... And then go full german and eat it with Mett :)

    A tip w/regard to yeast expiry. I have used yeast that was several years past expiry but I proofed it first with a bit of flour, sugar and warm water for about 30 min to see if it made bubbles. If it is alive the worst that can happen is it may be a bit slow rising. A better way to use old yeast might be prefermentation overnight before baking.

    I’ve been searching youtube for weeks on a comprehensive video on how to make a simple loaf of bread. Today was my fifth attempt. By far your video, recipe, instructions (how to knead), tips (eggs at room temperature) and in particular, “ What yeast should look like,“ when it cures, was perfect!
    Although your video may be obvious to most accomplished bakers, as a novice it was beyond helpful. It gave me the confidence and courage to try, yet again to achieve a simple life long quest. Finally, at 65 years old, I made my first real loaf of bread from scratch!

    I started making my own bread a bit over a month now. I bake a loaf about once every 5 days and this is my go to bread recipe. I love it so much. It's simple AND it tastes great. I truly recommend it for people starting to bake bread. It's truly a forgiving recipe. I want to add that if you're doing this recipe for the first time you should definitely cover it up with some foil about 15 minutes in because it browns quickly. The first time I baked this bread I burnt the top because I wasnt attentive, but I just removed the crust and it still tasted great.

    Just a quick tip for my fellow newbies ; If you use White Lilly flour, you have to add 2 tbls for each cup of the recipe. For this recipe I used 3 cups + 6 tbls of all purpose flour. This is a great recipe, by the way. Thumbs up !!

    • @FeastandFarmCooks
      @FeastandFarmCooks  2 года назад +2

      White Lilly is second worst only to Pillsbury flour in my baking experience. It's just not finely milled enough to suit me but I'm glad you got it to work on your loaf!

      Using White Lilly is the only time I’ve messed up bread. It took three times to realize that the flour acts so differently. I was doing sourdoughs, this would have been a better recipe to use it with(hydration).

    I've tried to make bread before and failed. I decided to give it another go and found this video. I followed it step by step and in real time. It was great to be able to do that by the way. The result was amazing. I'm not exaggerating when I say that this is probably the best tasting bread I've ever had. Obviously ingredients play a part in this (I used high quality flour, etc.) but it must be acknowledged that the teaching did too. What was a revelation to me was the statement "read the food not the recipe!" that made all the difference. Not being confident in my cooking, I sweat over the recipe, but taking on this advice made me relax and trust myself to just monitor the mixture. This means that I didn't stress when I needed to let the mix rest, etc. which were more than double what she said - I'm assuming because the temperature was low. I stuck to that concept of read the food. Right up until the end ... just as I thought the bread was right, it was about 5 minutes too early, I thought "it looks right, but it's 5 minutes too early, I'll just wash my hands and then take it out of the oven". Literally, in that time the top burnt a little bit. But the end result was amazing. Thank you so much. I will bake a couple of more loaves of bread while watching this video until I feel confident to do it on my own. But folks, in my opinion take on board her statement "read the food not the recipe". P.S. I'm having trouble not cutting more slices to eat now. :)
