Tri-Color Quinoa Bread

  • Hello! Hello everyone! I'm new to baking! Today I would like to share with you the three-color quinoa bun I made. Ingredients: 270g high-gluten flour, 5g salt, 210g water, 30g tricolor quinoa, 3g low-sugar yeast, add appropriate amount of water to a small pot, pour quinoa and cook for about 10 minutes, turn off the heat when it blooms, and use a sieve to remove the water for later use, high-gluten Pour the powder into a large plate, soak the yeast with an appropriate amount of water, pour the yeast water into the flour, add salt, add the remaining water and stir well, add quinoa and mix well, seal with plastic wrap and ferment for 1 hour, and stretch for the first time after one hour Fold, wet your hands with water to prevent sticking, grab one side of the dough and stretch it up, cover the other side, then grab the other side and stretch it up to cover it, stretch the left and right sides in the same way, close the mouth tightly, and loosen the plastic wrap seal for three Ten minutes, thirty minutes later, use the same method to stretch the second time, and then relax the seal of the plastic wrap for another 30 minutes. After 30 minutes, use the same method to perform the third stretch. Seal and ferment for one hour. After one hour, the dough is ready. Sprinkle some flour on the workbench. Turn the pan upside down on the countertop and let the dough slide down on the flour naturally (do not press the dough). Dip some flour on your hands and hold the dough on one side Pull it apart, then hold up the other side and pull it into a rectangular shape, lift it up and fold it in the middle, cover the other side, pinch the fold tightly, cut two parts, and place them on a baking tray lined with butter paper (cut the butter paper to separate Dough), cover and ferment for 45 minutes. After 45 minutes, the dough has been fermented. When there are 20 minutes left to ferment, adjust the oven to 230 degrees to preheat, put the bread in the oven, and bake for about 25 minutes until golden brown. The bread is out of the oven, golden brown, very beautiful! Let cool and cut open, the inside is full of large and small air holes!
