Listening to the sound when you dug them reminded me of mom. My mom would have the town bring out all of their leaves and she would put a thick layer of leaves over her root crops like carrots and parsnips. She would go out in winter and uncover the snow off of them, then the leaves and she would dig carrots and parsnips in the middle of winter and they were so sweet and delicious. Makes me hungry.

Hopefully they taste as good as they look. I have a funny story to share: the first time I planted a garden after getting married, come harvest time I thought I had “sick carrots “ which I tossed. Turns out I accidentally planted a pkg of parsnips among my carrots 🤣🤣 oops! Great video, thanks for sharing your progress. It’s fun to try new things in the garden 💚
I use parsnips along with onions, celery, and carrots as bed when I roast a whole turkey. I get the best gravy from that and the veggies taste amazing. I get this deep rich gravy. Enjoy your bounnty of parsnips

Okay. I just have to say, I always get a kick out of how excited Laura gets while gardening. But her pulling parsnips is the cutest thing I’ve ever seen! When she says “Aaron look at this!” and “awe look, they love each other!” ❤️
Nice harvest. If you make mashed potatoes you can mix in parsnips. Also chicken broth, chunks of chicken, parsnips, celery, and carrots make a nice warm soup on a cold day after shoveling snow.
One of my most favorite veggie dishes, maybe my #1, is mashed parsnips and rutabagas. What I do is use about 70% rutabagas and 30% parsnips. You can play with the percentage depending on how sweet you want it, more parsnips mean sweeter. I cut them into chunks (peel the rutabagas of course) and simmer them in a pot with smoked pork chops and/ ham hocks. When they are fork tender, think potatoes for mashing, I reserve some of the liquid and drain them. Then, I mash them with butter, lots of pepper, and salt to taste, adding the reserved liquid as needed to get a thick mashed potatoes consistency. I add the pieces of smoked meat to them as well. This is absolutely delicious. ETA, the rutabagas add a complexity and flavor that you don't get say with potatoes. The combo of rutabagas and parsnips is just yum.
if you plan on growing parsnips again next season, keep half of them in the ground until early spring. that way you don‘t have to use them all at once and you will be able to enjoy fresh ones as soon as the soil „defreezes“
Excellent harvest, kiddo! Just a quick tip. Parsnips germinate best in the dark, as I found out from another gardener while attempting my third trial. He said to cover with a plank of wood after sowing, which I did, but I found that once the seedlings came up they hit the plank and would then struggle. So I adjusted the plank by placing spacers underneath at both ends, allowing more room to grow but still keeping them in the dark. When I could see the were big enough, I removed the plank and grew them on as normal. Through this advice I finally got my first crop of parsnips. That and fresh seed is a must. Enjoy your bounty!
Also wondering how you keep the coop and run clean. We have chickens in an old coop and they poop so much! I want to build a new one but first need a plan to keep it clean.
@@lmheling ~ I Do Not Own Chickens, However, Reading Several Comments From Those That Do, It Was Suggested To Buy A Large Piece Of Vinyl Flooring Off The Roll At Lowes Or Home Depot, To Then Put Down And Protect The Chicken Coop Floor, Before Scattering Pine Shavings On Top. That Way, You're Able To Wash It At Least To Keep The Floor Cleaner And Even Replace The Large Sheet Of Vinyl Over Time, Should It Become Necessary. We've grown parsnips too (must be a Montana thing :) and you can store these for a long time, just like carrots! Or chop and freeze. Or you can pressure can them in jars all to enjoy in the dark winter months! Bon appetit!

Years ago, I saw a gardener on a PBS show try to grow the longest parsnip. I think he used a concrete cylinder filled with sand. He carefully removed the sand so as not to break the root. It was several feet long, but pointless (IMO) because it was so skinny. Nothing to eat off that plant.

Happy for your harvest .Your excitement was just to cute .I feel your happiness Why cause I have a container and I threw some bell peppers into next to my cayenne pepper plants and behold the other day along with my peppers I saw a nice bell pepper .I knew that plant looked diffrent .told my daughter I think my bell pepper seeds took .we both laughed when I sent her a picture . I like to fry potatoes, onions and parsnips together. I wish I lived near you - parsnips are so expensive in the grocery store. I need to try growing again. Did in a pot last year and didn't do great - will try the raised bed (didn't before because I thought not deep enough but now I'm inspired for next season). How exciting to see the bounty. Enjoy it. One thing I do with an abundance is I roast partially and then I collectively freeze the, let’s say, 2/3 roasted root vegetables. It’s somewhere between individual pieces and a paste. Then when I defrost and finish roasting I have preserved the sweetness and although they’re not separate pieces you have a extremely tasty homegrown roasted root mash whenever you want it.
My mom would also partially roast them freeze parsnips and beets. Then we would pull out and add to stews/soups or finish roasting in the oven. One of my favorite winter side dishes is a mixed roasted vegys with potatoes, radishes, parsnips, turnips, carrots, and beets. So so yummy!
One of the wonderful things about these root vegetables is that after you clean them up just cut them up to bite-sized pieces either peel them and cut them up to bite-sized pieces and freeze them for future meals! It's just me and my mom here but we're trying to be self-sustainable and flying to eat more vegetables and fruits from what we can grow in our own backyard instead of relying in the grocery store when it comes to harvesting vegetables and fruits so that is one thing you could always think about is leaving yourself a good portion of the freezer for fresh vegetables for future meals

I live in Canada above Montana and we do the sane thing with parsnips. Yum. When you do a beef roast try this. Peel and cut them into pieces them , carrots and potatoes, add them into the roast the last hour of cooking (with some water). Roasting the parsnips brings out the sugars
Ohhh, that was amazing! My goodness, must be so so satisfying to grow food. I've mostly had an ornamental garden -- not much full sun in a small yard and made flowers a priority. But your veggie videos REALLY make me want to find room to grow some. Oh, also, lots of those parsnips grew deeper than the raised bed, didn't they?! Amazing, just amazing.

My husband grew parsnips for the first time this year too! I made a pureed soup with roasted parsnips, apples, potatoes, onions, etc. Vegetable broth, cream and fresh thyme, too. It was sooo good. We love parsnips around here!

Just a thought, we use a pitchfork to loosen the soil around root plants like potatoes, carrots and beets. Maybe that would work better than a shovel. We grew beets for the first time this year and have loved them. May need to add parsnips next year.
My mouth was watering thinking about all those parsnips. I LOVE them! My family always grew parsnips in NH. We covered them with hay mulch and harvested them as needed throughout the winter.

This harvest is SO exciting! Can I come to dinner? Love them. We dug them starting this time of year.....enough for what we wanted. Covered the rest over w/ straw and harvested a bunch as we used them. But, I bet they will hold over quite awhile in the basement or storage quite awhile. Good for you for growing such beauties.

you can do that with parsnips. to store them in ground just cut the tops off and cover with a tarp and pull as needed through winter.

In Ireland parsnips are usually boiled with carrots then mashed together with some butter and pepper. Delicious!
This is popular in New Zealand to, it must be our Irish ancestry :)

My Irish father-in-law boils and mashes carrots and parsnips together to serve alongside mashed potatoes and "mushy peas" with any holiday meal.
Carrots get super sweet if left in the ground over winter time, too!🥕

One of the wonderful things about these root vegetables is that after you clean them up just cut them up to bite-sized pieces either peel them and cut them up to bite-sized pieces and freeze them for future meals! It's just me and my mom here but we're trying to be self-sustainable and flying to eat more vegetables and fruits from what we can grow in our own backyard instead of relying in the grocery store when it comes to harvesting vegetables and fruits so that is one thing you could always think about is leaving yourself a good portion of the freezer for fresh vegetables for future meals

The two parsnips that love each other
I live in Canada above Montana and we do the sane thing with parsnips. Yum. When you do a beef roast try this. Peel and cut them into pieces them , carrots and potatoes, add them into the roast the last hour of cooking (with some water). Roasting the parsnips brings out the sugars
You can also cut and pickle parsnips. They are delicious!! Include a piece of beet and it turns a pink color. Looks and tastes delicious.

Ohhh, that was amazing! My goodness, must be so so satisfying to grow food. I've mostly had an ornamental garden -- not much full sun in a small yard and made flowers a priority. But your veggie videos REALLY make me want to find room to grow some. Oh, also, lots of those parsnips grew deeper than the raised bed, didn't they?! Amazing, just amazing.
Wow that's awesome put them in clean sand in buckets in a cool place they should keep a while. So happy for you I enjoy your gardens as at this time I am unable to have any garden .

My husband grew parsnips for the first time this year too! I made a pureed soup with roasted parsnips, apples, potatoes, onions, etc. Vegetable broth, cream and fresh thyme, too. It was sooo good. We love parsnips around here!

Just a thought, we use a pitchfork to loosen the soil around root plants like potatoes, carrots and beets. Maybe that would work better than a shovel. We grew beets for the first time this year and have loved them. May need to add parsnips next year.

My mouth was watering thinking about all those parsnips. I LOVE them! My family always grew parsnips in NH. We covered them with hay mulch and harvested them as needed throughout the winter.

Cut them into discs, steam and then stir fry - my Welsh grandmother's parsnips. Roasting dries them out.

This harvest is SO exciting! Can I come to dinner? Love them. We dug them starting this time of year.....enough for what we wanted. Covered the rest over w/ straw and harvested a bunch as we used them. But, I bet they will hold over quite awhile in the basement or storage quite awhile. Good for you for growing such beauties.

I love your excitement and enthusiasm when your crop is a winner. I do a lot of juicing and juice parsnips and oranges together that make a thick yummy drink.
My parsnips didn't grow but I didn't expect much. My carrots and radishes were puny. Poor soil =] I am so glad you have had success!
