You inspired me to make this tonight. Wife killed it and she usually doesn’t like chicken dishes. My 5yo loved it too. Sautéed some onions and tossed them over the rice and some fresh asparagus. Chicken katsu is one of my favorite foods! I make it with Japanese curry a lot when it’s cold or rainy or overall dreary, and it makes me and my family feel better :)

It’s fermented soybeans. So you can make your own, but it would be much faster and easier to buy it at the store. Probably want to use white miso for this as it has a more mild flavor.
I made this and it was amazing! My family enjoyed it very much. Though I did two versions, one with and without miso, and I think I prefer the miso-free. definitely 350+ F for oil temp, when the temp went down it took way longer to cook and the crispy skin fell off a bit (I learned after the first chicken to keep the stove very high) looking at mine, I didn’t think it was going to turn out well, but it was so crispy! Will make this again 100%
