Chicken katsu is one of my favorite foods! I make it with Japanese curry a lot when it’s cold or rainy or overall dreary, and it makes me and my family feel better :)
Okay, that is amazing, but if you have the chance, go to an Asian mart, and look for the brown tonkatsu sauce with the bulldog logo. Ever since I was a kid, we’d have 3-4 bottles on standby, it goes with EVERYTHING. Get a crepe, add some cheese, kale, assorted salad mixture, add some ham, and of course the tonkatsu sauce. Definitely one of the best and quickest meals

It’s fermented soybeans. So you can make your own, but it would be much faster and easier to buy it at the store. Probably want to use white miso for this as it has a more mild flavor.
The purpose of the egg is just to stick to the panko so anything sticky works, applesauce, banana, or yogurt is used a lot but I know that sounds kinda icky so if you’re not trusting then I would just suggest a water slurry or coconut oil

I like to add corn starch to the flour so it gets crisper. Yours looks scrumptious though

Can use the egg substitute I think is called just egg. Seen it work just fine for frying.
Greek yogurt is excellent on tofu.
Or could use homemade seitan for chicken.
