Bowtie Pasta with Zucchini and Tomatoes

  • This is a quick, easy dish to make and very tasty! It is great as leftovers, too.
    Bowtie Pasta with Zucchini
    Ingredients:
    1 box bowtie pasta, cooked according to directions on box
    2 tablespoons olive oil, divided
    4 - 5 medium zucchini, chopped in 1/4's
    1 medium onion, diced
    3 cloves garlic, diced
    Approximately 10 ounces of cherry tomatoes (one container), cut in half lengthwise
    2/3 cup chicken broth
    3/4 cup cream
    Juice of half a lemon
    1 teaspoon dried basil, or fresh basil to taste
    1 teaspoon salt
    1 teaspoon black pepper
    Shredded Parmesan cheese to garnish, optional
    Directions:
    Make pasta according to directions on box.
    Drain pasta and pour back into pot.
    In a large skillet over medium heat, heat 1 tablespoon of olive oil.
    Place half the zucchini in pan and cook until nicely browned up.
    Remove to a bowl.
    Cook the remaining zucchini the same way.
    Next, in the same pan, cook the onions and garlic until the onions are translucent.
    Add the tomatoes and stir.
    Pour in the chicken broth and scrape the bottom of the pan making sure to remove anything that stuck to the bottom of the pan so that gets incorporated in.
    Add the cream and stir.
    Add the zucchini back in and heat until just heated through.
    Pour the zucchini mixture on top of the noodles and stir it all up.
    Serve garnished with Parmesan cheese.
    Makes 8 servings.

    That looks really yummy. I love the combination of veggies. And of course I love pasta. I’m wondering if a little rotisserie chicken would be good added. I would love it without meat but my husband loves his meat in dinner. I’m going to make this!

    Zucchini is called courgettes here in England UK. Personally I don’t think they have much taste but they’re okay chopped small. I think I would like this recipe if I replace the zucchini with mushrooms. I will try it, delicious thank you for the recipe. ❤

      That's interesting. I didn't know it had a different name. And you're right, it doesn't have too much of a taste - just enough. I'm sure mushrooms would go really well in this dish, too. 😄
