Aquafaba Meringues / Chickpea Meringues

  • I found a recipe to use the liquid from the can of chickpeas so thought I'd try it. The chickpea liquid is called aquafaba.
    Aquafaba Meringues
    Ingredients:
    3/4 cup aquafaba (should be 1 can chickpeas, also called garbanzo beans)
    1/4 teaspoon cream of tartar
    1/2 cup sugar
    1 teaspoon vanilla
    Directions:
    Using a mixer with the whisk attachment, beat the aquafaba and cream of tartar on medium speed until foamy. About 2 - 3 minutes.
    While still on medium speed, slowly add the sugar and vanilla.
    Turn up to high speed and beat for about 5 minutes or until stiff peaks form.
    Scoop mixture into a piping bag fitted with a 1/2" (806) tip.
    Cover 2 cookie sheets with parchment paper.
    Pipe quarter sized meringues onto cookie sheets. About 48 meringues should fit per sheet.
    Bake at 200ºF for 1 1/2 hours or until cookies are dry and crisp.
