  • I like to have oatmeal for breakfast but it's kind of bland by itself so I like to find ingredients to add to it. This Snickers Baked Oatmeal is super delicious and one I'm sure to eat again and again!
    Snickers Baked Oatmeal
    Ingredients:
    2 cups oats
    2 cups milk
    1/2 cup peanut butter
    1/3 cup coco powder
    1 tablespoon maple syrup
    2 tablespoons chia seeds
    1 tablespoon ground flax seed
    3 large dates, chopped
2 tablespoons peanuts, chopped - for the topping
    Icing:
    1/2 cup peanut butter
    1/4 cup coco powder
    4 tablespoons maple syrup
    4-5 tablespoons milk
    1 teaspoon vanilla
    Directions:
In an 8" x 8" glass dish, mix together oats, milk, peanut butter, coco powder, maple syrup, chia seeds. flax seed and dates.
Bake at 350ºF for 30 minutes.
    Let cool.
As the oats are cooling, make the icing.
In a food processor, mix together the peanut butter, coco powder, maple syrup, 4 tablespoons of milk, and vanilla until it is a smooth icing consistency.
If it is too thick, add more milk 1 tablespoon at a time.
If it is too thin, add more coco powder 1 tablespoon at a time.
Once icing is done, spread on top of oatmeal.
    Sprinkle chopped peanuts on top.
    Serve and enjoy!
    Refrigerate leftovers.
    Makes about 6 servings.

My mom ate it as a dessert and she really liked it. I like that there was no sugar in this recipe yet it was sweet enough to satisfy my sweet tooth. ☺

Jenny I use oatmeal to make protein balls. Oatmeal, peanut butter, honey, chocolate chips, they freeze great to grab out when you need a snack!

Hello I suggest you research the additives and preservatives in the foods you eat as most of the prepackaged foods (especially oats and powders) have high amounts of glyphosate, microplastics, and pesticides, all which contribute to the damage of DNA in the body, and can lead or worsen cancers of the GI. Best wishes!

Thanks for that information. I will keep it in mind. As I replace the ingredients I use up I look for the organic and more healthy options. ☺
