Vanilla Chia Seed Pudding

- I usually put chia seeds in my smoothies and salads so I decided to try to make pudding with them, too. The end product is kind of like a Tapioca pudding.
Vanilla Chia Seed Pudding
Ingredients:
1 cup milk
1/2 cup yogurt
1 tablespoon maple syrup
1 teaspoon vanilla
pinch salt
1/3 cup chia seeds
Directions:
In a large bowl, whisk together milk, yogurt, maple syrup, vanilla and salt.
Add chia seeds and whisk until well mixed.
Let sit 15 minutes.
Whisk one more time.
Pour into serving dishes.
Refrigerate for at least one hour.
Top with your favorite fruits.
Enjoy!
Makes 2 servings.

Ha, ha! Yeah, couldn't believe this one took me 8 tries to get the ending right. That's alright, I just laughed at myself about it. This is a pretty easy dish. And I like adding chia seeds to my other dishes, too. Easy way to get some of that good Omega 3's in and stuff. I hope you're having a great day! ☺

Thanks! And yeah, it was different but did taste just like vanilla pudding. I think I'm going to try adding cocoa powder next time and make it chocolate. ☺
