  • This has been. holiday side dish in my son-in-laws family for generations. The first time I was introduced to it I wasn't expecting much, but boy was I surprised. This has been a favorite of mine ever since and I always look forward to the holidays so I can have this special treat.

    My mom used to make scalloped corn, i have a feeling they're very similar. she used creamed corn, while you pretty much make the cream yourself! She also used saltines, thus the scalloped - but as you did, she used plenty of butter, some milk and sugar. My mom's recipes are often hard to follow... she will say things like "a hand full - or - use half a drinking glass" lol. The funny part is, when i made it i called it corn pudding! great video, easy to follow recipe, ty as always Lani!

      When Wendy cooks, she will say a shake of this or a dollop of that. She actually cooks by taste, and is amazing at it, but we are trying to get her to be aware of measurements so we can all have the same success. When I was first introduced to corn pudding, this was not what I expected, but was pleasantly surprised by the flavor and how it complements the holiday meal as a side dish.
