    I have great memories of helping my mom and dad prepare corn for the freezer every summer. One year, they found corn for 10 ears for a dollar - so they filled the backseat of the car with corn!

      If you cut corn like we did on the farm in VT, we laid newspaper on the table, stood the cob on end against the surface firmly and in one slice took the whole kernel off in strips or rows using the sharp part of the blade, without a mess and no waste. Then we used the blunt side of the knife and did a scrape or two around the cob after all kernels were off. The short knife made it safer to avoid cutting your fingers which stayed fixed on the top end of the cob.

    Dear Granny Pat,
    I stumbled upon your channel recently, and despite the stark differences in our backgrounds-I'm an ethnic Somali, born and raised in the countryside of Kenya and Ethiopia before moving to the Midwest of the United States-I couldn't help but be deeply moved by your videos. Your fond recollections of childhood memories, the warmth of family, and the mastery of cooking resonate with me on a profound level.
    Growing up, surrounded by aunts and grandmothers, I experienced a similar tapestry of love woven through the art of cooking. Their ability to transform simple ingredients into culinary masterpieces, adjusting recipes based on what the season offered, made life's challenges more palatable. Your videos, though rooted in Southern American culture, transport me back to those cherished moments in my own family's kitchen.
    Thank you for sharing not only your recipes but also the essence of home and tradition. Despite the geographical and cultural distances, your channel feels like a visit to my own grandma's kitchen, a place filled with warmth, nostalgia, and the timeless magic of good food.
    Gratefully,
    Ridwaan

    Oh my how this brings back memories. When I had access to fresh corn back when my father always planted a whole acre or more of corn every summer, I cut corn off the cob for days on end. We also froze it on the cob, too. When you have to buy the corn it’s not nearly as appealing as walking out into a family field and gather a mess of corn for free. I avoid all sugar and all starchy vegetables now because I need to control not becoming a diabetic, so I low carb eat 95% or more of the time. I do love corn, so if I do fudge on my diet it’s usually with corn, cornbread or a good piece of sour dough bread. And yes, cutting corn makes a gigantic mess everywhere!!!

      I forgot to add about the way I cut corn off the cob. I hold the larger end of the cob against a large plate (or pan) and I hold the small tip of the ear with fingers, then firmly slice down. When finished with each ear of corn, firmly press the blade of the knife at the end of the cob, scraping down in order to get all the cream removed. Stir to mix the cream thoroughly with the grains of corn. Delicious!

    Granny Pat, we can speed up the videos when we watch, you go at your own pace. Also your video is fine, you need someone to edit it afterwards if you want time-lapse or before and afters. But we're here for the content not production quality. 😊 No need to apologize. I love these recipes, but I only make them at holidays too.

      Keep in mind, I’m a beginner. I’m still trying to learn the terminology. Next, I’ll try to learn how and when to use the terminology. I started with the word “mouse”, the computer mouse, not the fuzzy wuzzy kind. My tutors are pulling their hair out trying to teach me something. When they think they have succeeded, I forget what they told me. Be glad you aren’t my teacher.!!!

      No, it is just another vegetable dish. In fact, if you are cooking for only a few, try baking the corn pudding in individual ramekins if you have some. They add to your decor and don’t get mixed with your other veggies on your plate.

    You can use a Bundt pan, place the ear of corn in the hole, and scrape with butcher knife. I won't buy fresh corn if it's more than 25¢ an ear/ it's been as high as 60¢ an ear!!!!!

    • @chitchatwithgrannypat7900
      @chitchatwithgrannypat7900  11 месяцев назад

      No corn here for twenty-five cent! I tried the bundt pan. I thought you had to push the corn through the hole. No wonder it didn’t work!

    • @SD7024

      @@chitchatwithgrannypat7900 well, you only set the end of the ear in the hole, then the kernels you scrape fall into the Bundt pan, so it doesn't make a big mess. ( I don't need help messing up my kitchen) 😆😆😊
