Uncle clyde is the best.. every weekend I watch his videos to cook his way.. I'm in the US so I dont get all the ingredients as him or as tasteful as him but I enjoy cooking his way

Who would think that people can't even come home and no matter how much money you have you can't enjoy it because of Covid restrictions? Wow I was telling my wife about an amazing Easter weekend I spent in Trini in 87-88 we camped on Manzanilla beach (bath tub derby) and I always remembered we drove down to Guayaguayare by a friend's house and they made that same bake with fire on top & below it was a first for me and have not had it since man that was the most scrumptious bake I had with coconut water.

Listen I like Uncle too bad!....a quater pack of yeast....empties half a packet....2 spoon of sugar....throws in 2 heaping soup spoon of sugar...and a pinch of salt, not too much...dashes almost a tablespoon of salt...yall I cant breath...I love it! My grandmother cooked like this, measurement in game on 100

I didn't see you add any butter or margarine. That would of had the bake soft and nice. With no cracks in its appearance.

Uncle Clyde doing it old school. Grating the coconut after shelling it. But i notice putting spices in the bake like essence. I never saw my Mom doing this it was pure coconut and it was delicious just so.

Uncle, I felt queasy watching you with that knife removing the dry coconut from the shell. Have you tried freezing the coconut (minus husk) overnight then taking it out and hitting it with a hammer (I would start at the end with the eyes)

I do the same thing. He know he is doing,if you freeze the coconut it won't grate to good.
Frozen coconut doesn’t grate, I do the same.
It's not neccesary to add milk to your dough to get it to a soft texture. The butter and warm water does the trick.

I don't don't have fireside ,I do it on my stove top and turn them on other side , Yummy.
I make mine on the stove or sometimes in the oven but the taste of fireside bake top it off.
