    Swear I feel like I home when I look at uncle clyde. I could feel the breeze passing tru the kitchen and smell the pot. Let the food be your medicine and the medicine be ur food . Love to you and urs uncle clyde. Stay strong and young as u are.

      @@tharamatikaufmann4681 no you don't have to fry roucou first. I've always known it to be added to the pot after most ingredients were already placed in it. BUT I guess everyone has their own technique.

    I wished that some of these new age cooks will look at his videos and learn to cook the proper way. Food should be eaten in it's purest simple form/style. Thanks Uncle Clyde. If God ever sees it fit for me to visit Trini you better believe it I am going to go to Maraval up in the hills to visit you and your family. I know how Paramin folks are my Godmother was one really nice humble hard working people.

    2:18 Yes! Tell them, Uncle Clyde. Tell them again! I never understand why some people like to have these big breadfruit quarters in their oildown and when you bit through it it's choking dry. Uncle Clyde is a man after my heart!

    Looking at this man cook not nly does it make you hungry i sooooooo appreciate the simplicity of his home utencils the curtains covering the lower cupboards the enamel utencils especially even that simple kitchen tap nothing fancy and of course uncle clydes SIMPLICITY in his speech it makes me feel homesick for where i grew up in the village of biche and the simple life of the country man

    Uncle Clyde really worked hard to prepare this wonderful meal. Cut up pigtail, bust and grate coconut, and peel breadfruit without a food processor or electric tool. WoW, Delicious.

    This way is so different... Tomatoes and it's dry... I never saw it done this way but then again parmin does alot of things different

      Karen T ruku is natural red food coloring used by local cooks before there was tomato ketchup. It is from a plant.
