BEST PULLMAN HONEY WHITE BREAD DOUGH RECIPE: (Pain de Mie=Best Soft Bread)

  • Pullman Honey White Bread Dough is soft with a fine crumb texture, and it has no crown or thick crust to cut off! Perfect for French Toast, Grilled Sandwiches, and even buttered with a bit of honey! It last about four to five days on the counter and up to 2 months in freezer. 13" loaf makes more than a dozen sandwiches. I use the leftovers for croûtons and bread crumb; Store these in freezer as well. I hope you enjoy my personal recipe for this bread and PLEASE, give me credit if you use this recipe on your show.     Now, in this video, I make up a recipe that made not only one 13" loaf, but it made 10-11 cinnamon rolls as well! LOL!

    Chef Janie's Pullman 13" Long HONEY WHITE BREAD recipe
    (or will work for 2-9" Pullman Pans)...this makes enough dough for a batch of cinnamon rolls as well with 1-13" loaf as well..ENJOY!)
    Ingredients:
    1-3/4 cups of Water (between 98*-110*F)
    plus another 3/4 cup of water when mixing in last 2 cups of flour)
    3 tsp. of Instant Yeast (Bread Yeast is the same)
    (if using reg yeast let it proof with sugar for 5 minutes before proceeding.)
    2 Tbsp of White Sugar
    2 Tbsp of Brown Sugar
    2 Tbsp of honey
    2 Tbsp of favorite oil (I use veg oil)
    6 cups 50/50 mix flour (1/2 bread flour & 1/2 All purpose flour)
    2 tsp of salt
    3 Tbsp of Instant Milk Powder (or Buttermilk powder)
    4 Tbsp of Softened, Unsalted, Real Butter (add before last 2 cups of flour are added)
    Direction:
    Mix above ingredients well, and add the additional 3/4 cup of warm water with the last 2 cups of flour; mix until you get a nice soft but a bit sticky dough; and when you get to this consistency, set mixer to low again, and knead in Mixer on low for 5 minutes; dough should be a bit sticky and pliable when pulled on.
    Coat warm bowl with oil and turn dough in bowl to coat dough.
    Let rise in warm place till doubled (about an hour).
    Punch down dough lightly and then on floured surface, shape into rectangle and lenght of pan...roll up dough and pinch off seam and ends.
    (...this dough needs to be cut down to fit even a 13" Pullman Pan.)
    Cut off 3/5 of the dough and save for rolls or a smaller bread pan.
    Pinch off the cut end with a tuck and pinch method on ends of bread.
    Place in lightly sprayed Pullman Pan and press in corners and make dough level and even in pan.
    Spray top of dough with oil.
    Cover with plastic and let raise in warm spot TILL ONLY 1/2" from top of pan.
    Slide gently, the oiled lid onto the Pullman Pan making sure not to deflate the dough.
    Now, place this into a PREHEATED oven at 350* F for about 30 minutes. Take out of oven, slide off Pullman lid and put back in oven for an additional 5 minutes or till center of bread sounds hollow and light brown. Internal temp should read 190*F on an instant thermometer.
    Remove. Brush top with real butter for a softer exterior when serving..take out of pan gently and set to cool on wire rack.
    Brush sides and bottom with butter as well.
    This recipe serves about 18 to 29 slices.
    It can be kept on counter for up to 5 days, or frozen, sliced, with freezer paper between each slice for up to 2 months in sealed bag and foil wrapping the bag or plastic.

    FYI - For yeasted dough if you are using a 13X4X4 pullman pan and have a scale 31 to 32 ounces of dough is perfect to fill pan. I use 31 ounces for white bread and 32 for wheat. Also do second rise with lid on and open 1/2 an inch so you can see when it is 1/2 inch from top ( lightly spray with oil and you don't need to cover with plastic, it wont dry) close lid the rest of the way and bake when it is 1/2 inch from top..

    FINALLY!! I have this bread rising (1st rise) as I write. Very uncomplicated recipe - goes together easily and in no time at all I have beautiful dough.     5minutes about a flour canister? God bless you sweetheart. You reminded me patience is a virtue. I don't have a Pullman pan but I am confident it will do well in two regular loaf pans.     Looks delicious, in Australia we call it a mackeys tin, I have two as I make two loaves of bread at a time 😀❤👍 just a tip, I find if I put my bread on its side in the slicer it slices easier, bread must be a little stronger on its side....

    Thank you so much, I’m not sure if I told you this story already but many years ago I was given a pan that belonged to my husbands grandfather who was a baker in his time but I had no idea what it was until I saw your video on the Pullman pan, low and behold that’s exactly what it was! Yay this Christmas my daughter also got me a new one so now if I would just get the use of my hand back from this stroke the good lord willing I will be making bread myself and doing the charity jar for sure!       Kneading bread dough might just be the ticket to working on those muscles that were damaged. Just make the dough softer (Less flour) and gently work it; It doesn't have to be rolled out with a rolling pin...just knead gently and put in the pan.

      It turned out a bit dry, maybe because i baked it for the full 35 minutes for a 9x4 pan. But the taste is 👍. Next time I'll reduce the baking time to 30 mins. I'll let you know the result😊

      I made bread crutons with the leftovers for my salads this week; dried them in the oven and they will last for weeks that way; so, for just us two, this 13" loaf pan worked out great. But if you think you do not eat much bread, buy two 9" pans, and put one loaf in freezer for other half of the week; this bread is only good for four days on counter before it's too hard to eat; microwave helps some...but nothing like fresh bread. You can grind the croûtons into bread crumbs for meatloaves and such as well!

      If it works! OH YEAH! They run over $100 or there abouts on ebay! Was it in good shape? You can use their plug ins on wall at the store and test them before buying; that is what we do! If it looks clean and no dents or scratches and hardly used, etc...you can spend even more on one! I'd go back and buy it...you can sell it for parts for more than that...the bucket and paddle and such are worth more than that!

    Looks fantastic, thanks for sharing. Did you place the Loaf Pan in the oven by itself or did you have something underneath it? Baked some bread and very often the under side is somewhat burnt. Convection or just regular baking? Thank you much.

      Convection; nothing under the loaf pan... turn in oven once 2/3 way through baking to get it more even on each end. Bottom usually burns for two reasons, too close to bottom heat coil...try baking bread on the top shelf, yet far enough below heating element it wont burn the bread top either. It can be the pan as well...a dark non stick pan bakes the bread faster on the outside; Same for cakes and muffins...etc... You'll notice on cake box mixes they tell you to cut off 5 minutes from baking time if using a dark pan. Or, your oven temp is way off. That is my daughter's oven; so I baked my goods at 20*F Less than my other oven. Her oven has a tendancy to burn everything...but I put it in middle of oven and reduce heat and it's working better for us now. Try switching things up and around see what happens. Get an oven thermometer and get a reading in your oven. They are cheapand well worth finding out what temp your stove really is!

    On the light side, someone in your house must be at least 300lbs, lol. Also a note. You mentioned this bread good for sandwiches but I believe it is probably the best bread in the world for French toast.

      LOL! I find my health is better when I am not eating out and making my own breads is a big part of that...I eat GF breads most of the time...but my homemade reg breads seem not to bother me as the store bought breads do. Must be in the preservatives...?? It is wonderful for French Toast-- with blueberries!

    I know if I was your husband I would be fatter than a pig you are a excellent cook I bet you make the best fried chicken mmmm I can almost taste it home made bread cream gravey made from the chicken grease and mashed taters . I remember my grandmother making bread it was hand full of flour and pinches of salt she didn't use any measuring cups or anything I'm sure you was kinda raised that way or at least remember it , it was more of a art I'm going to request SOMTHING and that's grandmas home made cinnamon rolls like your mom would have made if you have a recipe that you could help a person out with I would be so great full I love what you are doing your great !

    Miss Janie, you should pick up the hair salon rubber dealies they put on women's heads when they get their hair colored & whatnot. To get their hair colored or curled, you know what I'm talking about? It's plastic, with a rubber band like band around the edge. It would fit perfectly over the edge of the Kitchen-Aid bowl. I am going to buy myself some, for my mixer. My Mother in Law works in a salon, when I see her again, I'm picking some up. =)
    Great job with the recipe of the bread, I really love how the crumb turned out. I'll have to try the recipe out myself. I've been searching for a recipe that I like, that has a good crumb, good taste and will tempt even my husband.

    If you butter the pullman pan liberally, would you still need to butter the bread when remving it from the pan?

      I am from Central Indiana; my mother's side was Amish (Chupp) and hailed from both Nappanee, IN and Indiana, Pennsylvania. So, it is possible that I have some look-alikes out there. I've had 2 ppl this month swear I have a dopple-ganger in southern Indiana...where my dad was from. LOL! I'd love to meet this woman just for fun! Someday!
      My oven is no longer being made: Sears- Elite brand, stopped making in 2009.
      Best stove I ever had (Had two of them at two different houses).

      @@OurLittleHomestead I am from outside Philadelphia, half-way to Wilmington, DE. I am thinking about redoing my kitchen and wondered if there is a name for the type of oven with its split warming side as part of it. Also, I do not know of anyone selling your 13" by 4" by 4" Pullman pan. My parents lived out the end of their lives in Lancaster County, PA, (Amish country). I was born in Baltimore where my father began college and later ended the same, with WW II in between. The most fun time of my life as a kid was working on my Uncle Barney's farm (on Tuscarora Mountain) in Central PA. Blessing to you and your family.

    what did you prepare your Pullman pan with inside pan so bread doesn't stick,? can regular neut.oil be used or butter? or do I need anything all?

      I used my misto spray with veg oil; but you can use crisco or pam spray. No flour dusting is needed. The pullman pan says you don't need to oil pan, but you do. Just rub in with fingers the oil and be sure and put it on lid as well so it slides right off. Any fav oil will work.

    What exactly do u mean when your talking about the difference in bread machine yeast and regular self rising yeast? It wasn't very clear to me.

      RapidRise® and Bread Machine Yeast are different strains than Active Dry Yeast. RapidRise® and Bread Machine Yeast are grown with a higher level of nutrients and are dried to lower moisture content. The particle size of RapidRise® and Bread Machine Yeast are finely granulated to allow complete hydration of the yeast cells during the mixing process. The Active Dry Yeast larger particle size should be dissolved in water to achieve complete hydration prior to adding to the mixer. In addition, RapidRise® and Bread Machine Yeast contain ascorbic acid resulting in increased loaf volumes.

    Why 50/50? Usually i ll use bread flour only. Any reason? Save cost?

      Costs and it' works for this larger loaf type with the shape, the density is best for this recipe. You can use all bread flour but I find it to be too 'airy' in the middle. Not a true sandwich bread texture for me. Play with recipe, see what you like.

    hi Janie!! happy to watch the recipe video today, after the others about Pullman pan. I noticed your wood floors in this video, they look a lot like our house we bought just a few months ago. what type of wood are they and what have you found that is best to clean them with? I want something that nourishes the wood (doesnt leave it cloudy looking), but is also antibacterial, which I'm having a hard time finding both.

      Hi, hon! Thanks! About the wood floors, they are a 3/4" solid oak floor with a factory 'baked' on finish; I LOVE 'em! To clean them I swifter then with a steam jet of solution for wood floors after mopping with vinegar and water (about a 20/80 solution) then use the steam mop again with the solution that they have for my steam mop...now once all that dries... I go back over it every few days with a dust mop and twice a month with Pledge Wood Floor Shine! Now, I get all this at walmart! I know it's overkill but like you, I couldn't find an antibacterial which I needed when grandchildren and dog came along...they are so close to the floor when crawling around...I just couldn't see them picking up a cheerio or something and putting in their mouths after dog might have had an accident in same area of house...YIKES!! To spot clean I use clorox lemon wipes (in the pull ups) I hope this helped. I actually did my first vlog in a long time about 5 am and covered this subject! LOL! SO, I best get that uploaded! :P

      Yes, just replace 2-3 cups of the Reg flour for the whole wheat.

    You took 6 cups of flour so 50/50 means 3 cups of bread flour and 3 cups all purpose flour? Thanks

      No, I have not tried a 13" Pullman loaf gluten free yet... I have to order my flours again to give this a try. Not so many here are GF so I usually just make my small loaf from me. I have that video on my channel, just search "Gluten Free Bread" in my magnifying glass and several GF recipes will pop up!

    Carbs are 1/2 that of expensive bread! I'm diabetic. I have to know.

      You'll have to figure this one out...I have no idea ... I had 700 vids up before we found out hubby had diabetes ...so this is new to us, as far as living this meal plan style... hubby was not full blow diabetic when I made this bread years ago ... so I never kept track of carbs in my homemade items...then out of the blue...he suddenly started losing wt, sweating at night, migraines and peeing 22 times a day! We got him in to doctor when his wt in a month dropped 52 lbs. He was drinking a ton of water...and still...found out he was type 2 diabetic...as his family members all were around same age as him. Hubby is a snacker...so he got on meds ( xigduo xr ) and his fasting numbers went from over 500 down to 58 to 113 in the mornings...sometimes too low...but never been over 138 since we got him on the meds...but too low makes him dizzy and sweaty with headaches again...so now....trying to get him to average out around 90s to 120s...it's REALLY HARD to do this...He eats 3 meals a day with max allowed 60 carbs....and 3 snacks a day...no calories 4 carbs max...and that is helping maintain... He's on LOSE IT app and scans most of his food so they calculate his eating out or grocery brand nutrients for him. It makes it much easier to scan a menu or a jar of something and he knows right away what he can or can not have.
      What app do you use? Do you feel that homemade bread has less carbs? I've not made bread for him since he found out...I've been way too busy trying to remodel and get house on market. I thought I would tackle a 'diet' bread down the road...when we got moved out. ?? Any good recipes?? I am open for all the help we can get right now! Thanks!!!! It's definitely a journey!! I would love to start a community channel for diabetics to share ideas, recipes and DIY helpers...??? What do you think?

      It's the vinegar they add to it to preserve it; I sometimes add a touch of ginger or vinegar to some recipes...but not this one...Preservatives are what is making us sick!
