    You did a good job explaining how to use the Ank for making bread. Chain Baker on YT brushes the pans with soft butter to give the pain de Mie exterior a more buttery taste. He also puts the bread by itself back into the oven for a few minutes after removing it from the pan. This makes the exterior a little more golden and crustier and reduces the chance of the bread collapsing. I make a 12 grain bread by Rose Levy Beranbaum using the Ank. I developed an Excel spreadsheet to make a larger loaf including doubling the size to fit into the large USA pan that Amy used.

    This one is what we call "pan de miga" in Spanish and what we use to make sandwiches. We cut all the crust that it might have and then we cut thin slices to make the sandwiches which we eat at Christmas time, party time or at any time we want to eat sandwiches. Basically is a very soft and crustless sandwich. Sometime ago I was listening to somebody that was complaining and saying that bread should come crustless, many kids don't like the crust and parents cut it for them, and I said to her, coming to this country (Canada) is when I saw for the first time that the bread had a crust :), so I gave her the recipe for this bread :)...thank you Amy, your bread looks awesome!

    I LOVE my Pullman pan. I bought the smaller USA one from Amazon and the recipe from King Arthur website for the smaller loaf. Me or my hubs bakes one loaf per week for years now. Now I'm going to try to learn how to make loaves with fresh ground wheat berries. Subscribed.

    Did you ever do a Bosch Vs Ankarsrum mixer? I watched a couple of your other videos and you said you were going to do one but I couldnt find it. I would like to see the the comparison. Deciding what to buy and hear good things of them both.

    I love my ank❤❤, and because I came from Indonesia, I only can buy sandwich bread pan from china. I like to used "chefmade", and "sanneng" brand... They all nonstick PFOA free and easy to used without oil spray. Oh I tell you my experience with ank...,I ever used my ank with 3 kilos flour, it overflow and spill out 😢😢. Its really out of control. How to make it safe inside? Would you pls give me suggestion? Thank you Amy, I love your videos..

      Go k er to a read Beckers RUclips channel and you will find a lot of information about the Ankarsrum. They are the Ankarsrum importers for the USA. I bought mine from them and they have a pamphlet that they made of written helps for people that purchase the machine through them of extra getting started helps. Their oldest daughter Ashley is the USA customer service representative and has done some more helpful videos that are also on youtube in the last year

    I do not have an Ank, but do have a USA Pullman loaf pan...best money I have ever spent on a metal loaf pan ...every piece matches up with any slice of the loaf ... or a new loaf, so no worries if you need to start a new loaf when only one slice of bread is left from a previous loaf... they'll match up perfectly

      The Kitchenaids have really gone downhill. The Ank is a workhorse and you won't burn out the motor like on the Kitchenaid.

      Absolutely because the motor is much stronger. The kneading/mixing design is similar to professional mixers and the design has barely changed since it was first produced in Sweden around 1930. It comes with cookie/ cake making attachments but I’ve never used them.

    I would love a recipe like this but whole wheat if you can please. We don’t eat much white bread. My boy prefers wheat or multigrain. I already have the Pullman but I have not used it.

      I make a 12 grain bread using the Ank. It’s an older recipe from Rose Levy Beranbaum. I’ve doubled her recipe to fit the large Pullman size. Search the internet for Rose.

    Hi Amy thanks for this vid and recipe. Let me pick your brain: i use a lot of whole wheat flours and i am finding that the Ank's roller doesn't develop the gluten really well. I have tried several times (more than a dozen loaves) and i can't ever really get the window pane to happen...even after as much as 20 mins of kneading. Not nearly as good results compared with the kitchen aid. But I tried the Ank's dough hook this past weekend and I got far better results for the first time with their dough hook than I ever have with their roller. Have you noticed a difference between the dough hook vs the roller...or any differences between white flour and hard, whole wheat flours?

      What I do with whole wheat dough when it's stubborn is to let it rest for an hour covered tightly. It helps the gluten structure with time instead of force. After an hour go back to kneading. I use freshly ground wheat berries.
      I can't help with the mixer as I use a compact Bosch. It's only two of us.

    Hi Amy, looking to purchase a new mixer but want to make sure I get the right one this time (i now have 2 KA). I make a Portuguese Sweet bread which the recipe calls for 5 Lbs of flour and Im getting to old to do it buy hand. Which mixer would you recommend to handle that amout of flour? Thank you!

    How do you know how much dough to put in the pan? Is directions on to figure that out or did you have to trial and error it.

      It is basically trial and error. USA Pan has 2 sizes of pullman pans.
