As an Italian and pesto lover, I wanna share some tips to make this an easier process: just put one small clove of raw garlic instead of frying it in the oil. Also, to preserve the color of the basil just add it FRESH as the very last step in your blender, while everything is already blended, and add a small splash of ice cold water. I would also personally use a bit less oil to prevent the emulsion from separating. And lastly, please do not heat up pesto:’D you made a beautiful green pesto and frying it off will not only change the color, but also cook the ingredients when the whole idea of pesto is for it to be raw! You can help the emulsion by adding a small ladle of pasta water into the blender right before mixing the pesto with the pasta, which has to be off heat for optimal result. Other than that your dish looked amazing and I can imagine how delicious it tastes! And Pesto is freaking cute
You realize this guy boiled the basil, right? I think at this point any suggestion is useless and as an Italian you should know there is no way of saving this. Maybe he should have cooked the hamster instead, would have been less traumatic for Italian people..

Don't cook your basil, use raw garlic, use a mortar and pestle, consider pecorino instead of parmigiano reggiano, and don't oil your pasta before mixing it with the sauce if you want the sauce to stick. Fresh basil + garlic ground together by hand makes a world of difference in flavor.

u wanna know how i chop the green onions? i literally take 2 knives and stab it until it is so flat (its for green onion pancake) and when i kill ants i take my lil bros tricycle so i can crush it until its so flat and its literally just dust gone reduced to atoms and for some reason i love doing it also that one time i yeeted a onion on the wall and crack it bc i couldnt open the onion the outer skin was hard or smth and i felt like doing it (im 13 and since i was small and stupid at 11 years old it was ok) i still do the ant thing to this day
Hi Nick! I tried your pesto recipe, and I think it’s so cool that you have such a great balance in your videos. It was super fun to make, and turned out amazing! What I mean by such a great balance is that you have both things people can actually make at home and things that are really entertaining, but aren’t easy and the ingredients are hard to get. And to answer your question, yes he did boil it in a glass pot. There are glass pots like those that don't break even when it's put through extreme heat. I've seen a lot of people using those.
i'm italian from genoa, to make pesto you don't have to boil the basil, then you don't have to toast the pine nuts, you don't have to fry the garlic and to finish you don't have to mix the pesto and pasta in a pan on the fire. I am writing this comment to help you improve more and more in Italian cuisine

Second, NEVER, NEVER cook the pesto or else the olive oil will start cooking and frying everything else and that's not good,it breaks the meaning of that dish, 'pasta col pesto' is meant to be a spring/summer dish and there's no problem in serving it cold on the pasta, making not a hot dish but one with an explosion of flavors, where you can smell and taste the basil. you can actually try to use palestinian fresh olive oil. my grandfather has 30 km^2 space with only olive trees. well it is like basically a farm full of olive trees and every 2 months he sends us 15 liters of fresh olive oil. it is so fresh that you can still taste how it is. i wish i knew how i could send you a bottle because it is very delicious and that oil has nothing artificial in it. and because it is so fresh i once found a olive tree twig in the oil. so perfect
For pine nuts the best tip I ever got was to do it in an oven. Put it on 160 C with the fan on lowest setting or off, then after like 10 minutes turn the oven off and crack the door. After that you can forget about em for a while and they'll have the most even super beautifull golden colour.

you can actually try to use palestinian fresh olive oil. my grandfather has 30 km^2 space with only olive trees. well it is like basically a farm full of olive trees and every 2 months he sends us 15 liters of fresh olive oil. it is so fresh that you can still taste how it is. i wish i knew how i could send you a bottle because it is very delicious and that oil has nothing artificial in it. and because it is so fresh i once found a olive tree twig in the oil. so perfect

For pine nuts the best tip I ever got was to do it in an oven. Put it on 160 C with the fan on lowest setting or off, then after like 10 minutes turn the oven off and crack the door. After that you can forget about em for a while and they'll have the most even super beautifull golden colour.
