As for the veggies, we saute or blanche separately from the maim dish to preserve their freshness and form, as well as not to water down the sauce. Lastly, the Kare-kare is traditionally a little bland because it has to be paired with Shrimp paste on the side for added flavor/saltiness. Others put in the Shimp paste directly to the dish while cooking but i personally want to have it as an add on to every spoon-full of Kare-kare and white rice. Hope these help! 😊

I am trying to give up coconut milk too, because it has too much fat. I use creamy plant milks such as oatmilk or cashew milk plus add 1-2 tablespoon cashew/almond butter for the nutty flavor.
