Keto Sweetened Condensed Milk | Low Carb Sugar Free | Easy To Keto

- Sweetened condensed milk is one of the most common ingredients listed when making desserts. Since those of us who are practicing the ketogenic lifestyle can't just buy a can of condensed milk from the store, here is a simple recipe to make a keto version of sweetened condensed milk at home. With just a few ingredients and a little bit of time, you can enjoy you favorite desserts with this easy low carb, sugar free keto recipe.
Ingredients:
Heavy Whipping Cream - 2 cups
Allulose (or sweetener of choice - Erythritol, Monkfruit, etc) - 3/4 cup
Xanthan Gum - 1/8 tsp
Salted Butter - 2 Tbsp (or add a pinch of salt with unsalted butter)
Vanilla Extract - 1 tsp
Method:
1. Bring Heavy Whipping Cream, Sweetener and Xanthan Gum to a boil in a medium sauce pan on medium heat.
2. Keep simmering until for approx 20-25 minutes until mixture has reduced and thickened.
3. Turn off stove and add Butter and Vanilla Extract. Mix well.
4. Transfer to a container with a tight fitting lid and allow it to cool completely.
5. Store in the refrigerator for up to a week or freezer for longer.

Thank you so much for the recipe! Definitely allulose is the best for making creamy things that will be stored in the fridge - the end product stays creamy in cold temperatures. Erythritol makes things become crunchy when stored in the fridge. Many thanks- made this and turned out so good!
I bought xantham gum a while ago and never had a reason to use it till now 😄 I use Lakanto Monkfruit Sugar as my alternative. I prefer their brown.

@@sometimes8089no cool after taste, I make everything with allulose including baking recipes. You have to put a bit more that you'd put if it was sugar cane

Don’t make the same mistake I did, I let it simmer too long and it turned into almost dulce de leche or a caramel sauce. Just don’t let it turn brown 🙊 lol
Did you make the condensed milk on a gas stove? Gas cooks so much quicker then electric, you have to really turn the heat down in order to cook anything.

Thank you for using something besides erythritol. My body just doesn't do well with it and I can't stand that cooling effect. Hard to find any sweetener without it. Where did you find the allulose you used ? I don't see it on Amazon besides a syrup version.

I heard adding butter will harden the condensed milk after fridging, do you just scoop and heat it in a microwave whenu take it out or do you have to 'defrost' it and let it sit tilli ts softer to use? Or does this recipe not have that issue?

I don't use plastic because if you put the condensed milk in warm, you get the plastic taste. Better to use a glass jair, because you can put hot or cold into the glass without the plastic taste. Good recipe to use if you are watching your weight. I bet this recipe would be great in making homemade ice cream, can't wait to try it!

Hi I just found you and love this condensed milk. Just wondering I noticed on a comment that you said this recipe makes approximately 1 & 3/4 cups. How many carbs in this?
If there are 8 Tbsp in 1 Cup; then, 2 Cups is 16 Tbsp. Instead of just saying that there is

Yes, you can. It stores in the fridge for a couple of weeks.
What is Allulose made from?

I'm sorry, but I have not used Pyure before. You may be able to find substitution ratios online for different sweeteners.
Does it stay liquidy even when refrigerated? I made this once with erythritol and it hardened sadly
Yes, it does. The benefit of using allulose is that it doesn't have the "crispy" feel of erythritol when it cools down as well as the cooling effect.
Do you really need the xantham gum? I have seen others make this same ingredients but no xantham gum and it thickened up great.
I find that xanthan gum allows for less cooking and reducing time but you could leave it out if you like.
No, you don't need it. And you don't need the butter either...

Milk still lots of sugar in the way of lactose and it's better and healthier to not consume dairy especially with lactose.
Well, whipping cream doesn't have a lot of lactose...
Does This work to use it on warm coffee?
Absolutely! It dissolves pretty easily as long as the coffee is not cold.
What does zantam gum do to the mixture?
It is used as a thickener.

I like the texture but as some other viewers said, you can leave it out if you can't find it.
Wal-mart carries xanthan gum.
is xanthan gum a must? can the recipe be made without it?
Xanthan gum (in the smallest quantity) thickens the mixture and improves the texture. Having said that, you can leave it out if you have to.
Your mixture will thicken after 30 min . of simmering even without xantham gum.
Do I have to put the xantham gum in it? I don’t feel comfortable with it from what I’ve read about it. Just too fake.
Please remember that a cup of heavy cream contains 6 carbs. So the batch you made contains 12 carbs. When using divide accordingly. It’s not carb free.
Can I use erythritol?
Yes, you can use erythritol. I used to use it before I came across allulose.
Can I use 25% fat fresh cream instead of whipped cream?
I haven't tried it but you may have to cook the mixture longer as light cream will not be as thick.

yes, you can! But, I would not add xantham gum, I make mine with just whipping cream and allulose, keep stirring and keep it in low heat, so that the allulose doesn't burn
I heard Allulose gives a lot of digestive distress(upset stomach) ,what is your experience regarding that aspect .
I haven't noticed any issues. Usually, its the sugar alcohols that cause digestive problems if used in large quantities.

Should not be storing in plastic. Estrogenic plastic leeching into condensed milk. Great breast cancer carcinogenic.

Can I use Truevia?
In my opinion, stevia based sweeteners alone have a bitter after taste that is off-putting to me. However, if you are ok with it, it should work.
Did you ever stop to think that cooking in plastic lined pans and using plastic utensils for cooking might not be the wisest things to do?!?
Plastic and aluminum should be banned from food use except for room temperature uses.
