    Sweetened condensed milk with cottage cheese, or with heavy whipping cream makes the best ice cream. You need a couple teaspoons of vanilla extract to keep it from crystallizing. There’s a small amount of alcohol in the vanilla extract. Add a couple heaping teaspoons of unsweetened cocoa powder, and the ice cream is delicious.

      In vanilla ice cream add green 1/4 tsp cardamom powder and pistachios and almond with crushed paneer, it will turn into Kulfi ice cream

      Enjoyed & will try it. Victoria have you created a recipe for pasta noodles? My 39 year old son is a diabetic & has worked diligently to loose 85 pounds since February. We watch carbs & sugar religiously. He misses pasta more than any other foods!! I was just telling him I was going to try your bread recipes soon & he said pasta was what he misses most. Any help would be appreciated! So glad I found you 🥰😘🥰

    I used to go to a Vietnamese restaurant where I'd order espresso and they would put condensed milk in it. It was wonderful. Today I am going to try this...

    I've made this several times now and it's delicious every single time. I made it with half evaporated milk and half heavy cream as I needed to use up the evaporated milk and even then it was delicious! Thank you for sharing!

      @@fen793 - I did what Victoria did and looked at the back of the can (or container) on Amazon and it has 'dextrose' in it. It also has Dipotassium Phosphate which is one of the ingredients used in fertilizers, etc. While Carrageenan also in evaporated milk is a thickener. So I would say it's far from keto-friendly. Thanks for asking that question cause I would have never thought that evaporated milk wasn't.

    This is Fantastic!! There a dish I want to try doing "Keto" that I have missed since I started Keto which is Creamy Coconut Shrimp that I used to get at a Chines Buffet.     I tried it in the past an failed but I will for sure give it another try! Have you ever tried the home made ice cream from bigger bolder baking here on YT with your condensed milk? The original version with regular condensed milk is THE BEST no churn ice cream EVER!! If you try it make sure to let the camera roll! 😊

    I love how you point out that "regular" condensed milk contains just milk and sugar! How simple. All the other recipes I've looked at adds the butter and vanilla.

      Let it simmer longer to evaporate more water from the cream and it will be thicker.

    You can add a tea spoon of powder milk to make the texture more dense

      @@cyndyfisher It's easy just use carnation milk with a stick of butter sugar to your taste, cook until start to get thick and place on a baking sheet or parchment paper, refrigerator until harden. Enjoy!

    I love, love, love your channel. I first found you through you bread flour recipe. I want you to know that I ordered what I need to make your flour recipe. I will be using it to make Angel Biscuits very soon and Ill let you know how they turn out.     Oh my word…my husband is going to love this. I have made several other keto versions and he says they are too buttery and doesn’t like them. Victoria, my husband can’t drink his afternoon coffee without it. I have just one question. Did you place it in the fridge hot or did you wait for it to cook slightly? I love what you do!

    Hi Victoria, I am truly grateful for your keto sweetened condensed milk recipe. It tasted incredibly close to the regular version, and I’m thrilled that I can now use it to prepare recipes for my brother who has diabetes.
    I have a quick question about the process. Is it possible to add the heavy cream and allulose together at the start, or is it better to simmer the cream first, then add the allulose and continue simmering?       If u simmer with allulose it will turn to caramel. Allulose when cooked browns and taste much different

    I'm dairy free keto. Will this work with full fat coconut milk? Also, I understood over the years that you should allow hot food from the oven/stove to cool to room temperature before placing in the refrigerator to avoid bacteria growth. Will it still thicken if left on the counter uncovered to cool and then place in the refrigerator? Lastly, can you incorporate dairy free keto recipes on your channel? Sorry for so many questions!

      I haven’t tried that milk! I think it would work tho. And yes it should still thicken fine. And dairy free! Ok 👍🏼

    So the macros would be the same as for the heavy cream? Does this work just like regular sweetened condensed milk? Does it thicken when citrus juice is added?

    Your's is the simplest. Others add butter some salted some unsalted and many add vanilla extract. I might add the vanilla extract myself too because it really brings in a more velvet taste but I am defo not adding butter. This is already a fat bomb.

    I make my coffee creamer with one can of sweetened condensed milk, low fat milk and vanilla
    Instead of alulose can I use Stevia for my sugar

    Made this ( I love it ). Our power went out due to storms and very high winds the other night. Had to throw out everything in fridge. How long can it be stored for ? I want to make another batch and keep on hand for coffee creamer. First batch I made turned out awesome and perfect, I think better than store bought !!!! ❣

    Hi Victoria and greetings and grateful thanks from our beautiful Island of Gozo! We are following our own type of Carnivore diet mixed with your amazing way of life. Would it be possible to ask you a question? Outsourcing these weird and wonderful products on Gozo is (to say the least) very expensive. Especially artificial sweeteners, and I make your keto condensed milk at least once a week as one of our staple ingredients in my cakes, custard tarts and ice cream. What I would like to ask is.... have you attempted to make the condensed milk out of your new sweetener blend (zylitol/erythritol?) and if so what is the finished product like?

      Hi! I’ve only made it with allulose but erythritol will re crystalize badly and xylitol might work if you have that but allulose definitely works. I’m so sorry it’s so expensive

    Looks good! I made some ginger "oatmeal" cookies last night using your all purpose flour. I used an allulose/monk fruit blend to make the candied ginger and lupin flakes for the oatmeal. They're so good. I need to experiment with the lupin flakes, but they gave it some texture. I used a recipe a regular carby recipe and just made the substitutes for the flour and sweetener and oats. At some point I'm going to try the self rising flour. I've already mixed it up.

      @@Nazketo444 honestly, I just looked up a few recipes on RUclips and then settled on one I found on Google by Alton brown. I just substituted the sweetener. Just type in Alton brown candied ginger. I must have gotten some extra spicy ginger because I boiled it for 45minutes and it's extremely spicy. So if I were to make it again, I'd boil it longer. It's still good though especially in the cookies

      @@knothead35 being too spicy was my problem the first time I made ginger candy also. If you try it again, change the water after boiling for a bit. It doesn't taste as great till you add the sugar, but I kept tasting the ginger and changing the water(think I did it twice) before it was the perfect spice for my family. I also didn't use the reserve water. Though I did use the ginger water to make gummys, just add gelatin and allulose(or whatever sugar sub you prefer).

      Allulose thickens like sugar do the problem is others may not thicken

    does this thickness retain its texture in the fridge? i hear other keto condensed milk either hardens and recrystallizes and u have to let it sit out in room temp or microwave to soften up the hardened texture.also do we simmer at medium/low heat?
