Fajita Michelada Marinade - the PERFECT RECIPE for your next Carne Asada

    MICHELADA MARINADE RECIPE:
    ½ c OJ
    ½ c Tomato Juice
    ½ c Michelada Mix by Don Chelada
    3 tbsp American Pitmaster company WOW!
    1 TBS APC OG or 1 tbs of course kosher salt
    1 tsp Cumin
    ½ tsp Cayenne
    1 tsp granulated garlic
    and 1 tsp Don Chelada Chile Limon Beer Salt
    Whisk, then add in 12oz of beer, one small diced shallot, the juice of three small limes and the juice of one orange. Whisk once more then add 1c of Oil and mix thoroughly.
    This marinade makes enough for two pounds of meat and we’re using flap meat - aka sirloin fajita!
    Cover the meat thoroughly and allow it ti marinate for at least one hour 3-4 is recommended and overnight is even BETTER!
    Drop your meat right on to a raging hot fire and flip, flip flippity-flip to keep the moisture inside the meat while developing that delicious char. I like to cook to a nice, medium doneness so about 135-140 degrees internal.
    Oh yeah, don’t forget to sip, sip sippity-sip your michelada in between flips!

    I grew up in North Central Texas, but have lived in the Pacific Northwest for the last 26 years. I STILL miss mesquite smoked meats and the fantastic spices like you use in your videos. I just can't seem to find the "good stuff" up here like I could in Texas. I've been to several fantastic local Carniceria markets, and they've turned me onto good spices but nothing like I could find in Texas. I'd cut and dry my own mesquite, and then slow smoke wild game over it. Nothing like a 30 pound wild hog slow smoked until the meat falls off the little ribs. I remember seasoning/marinating all sorts of meats with spices that didn't have a word of English on the packaging, and it was always so tasty! Keep making great videos man, and know that you've got one envious subscriber watching from the PNW.

    I love that you put in orange juice!
    I make an awesome salmon and the marinade is basically OJ, EVOO, honey, soy sauce, fresh ground pepper, and maybe a little bit of sesame oil or white wine. It depends on if you want it to taste asian or european.

    I do salt only for my higher end steaks, marinades for my flank, skirt, cheaper cuts, etc. Best of both worlds!

    Is that arrachera? I’m from Chicago and that’s all we usually use. Get the fat trimmed up and then they run it through the tenderizing machine always so good. My favorite steak.

    Growing up in Laredo in the 80's, our social group always just bought the cheapest Wishbone-style italian dressing + one beer, and used that for marinating fajitas overnight.

    Do you have a secret way to tenderize a skirt steak? It doesn’t matter what I do, they always come out a little tough, not sure what I’m doing wrong.

      Citrus.
      Orange, grapefruit or limes in the marinade and let it soak 24 hours+. Works good with chicken fajitas too. You can also pound it out with a meat hammer.

      Buy your meat elsewhere, some cuts are not "fresh." Week old meats are good but not fresh, a way to tell its not fresh is that the meat wants to curl up on either end when cooking. Look at his meat cut on this video, the meat laid flat no curling up or rolling up on itself. Marinade longer, 24hrs in orange, lime and chopped up white onion. The acid may help breakdown that tough texture. Finally, thin slice the meat, thicker meat is tough and longer to cook.

    This michelada mix isn't far off from my Mexican shrimp cocktail mix.
    The difference is I make everything from scratch and add other things as well.
    No beer but add sweet vermouth.

    Arnie, what do you think about using Budweiser Chelada beer. Comes in a few different itterations, Chelada Clamato, Chelada Picante, etc. 16oz can.
