    Cool about the type of meat. I normally use outside skirt but will def try flap next time. And the Modelo, right on!

    Wow, you used the entire bottle of Modelo! I thought for sure the subtitles would say "use half" and then we would all watch as the other half headed in the direction of your face! Nice slo-mo shot near the end with the smaller piece coming off the grill and dripping.

    How hot and how high should the temperature on the grill be before slapping the carne on the grill?

      You want the temps to be high. The higher the better the sear. 500F is good but you also want a zone with no charcoal so you can bring your meat to when your sear is good.

      Strip steaks are usually perfect with just salt & pepper but this would also work.

    Last time I made carne asada I marinated it in taco seasoning. It was tough, I either over cooked it or idk how to make it tender

    Nice, I use soy sauce instead of beer for my marinade and some vinegar. That's the only difference from your marinade and the one I make.

      Yes! BUT………not as thorough as heat cooks meat. The process is more gentle and it won’t “overcook” the meat as heat can do. The lime, in this case, actually works in 2 ways for us. First it removes the residual heat that could possibly overcook our meat and then it gently takes over………. AND adds more flavor! So that’s 3 😀

      Les, I hafta apologize. I answered your question thinking this video was actually the video below where I took some picanha that was cooked to rare and added lime juice to the meat to keep it tender and gently cook the meat to a med-rare.
      To answer your question on marinating the carne-asada with lime and it “cooking” the answer is no. The way acid “cooks” proteins is different from how we use heat to cook. Heat will overcook protein in a way that will end up removing all its moisture and you end up with a dried up meat. Acid can break down enzymes that can tenderize proteins.
      A good example is when using heat to cook shrimp the temperature causes the shrimp to turn pink. When cooking shrimp in lime juice the shrimp stay grey but both are edible.
