Hi Anneli, could you tell me the quantities of salt, nutmeg, and did you use white pepper or black? Also, did you use an egg substitute in this recipe? I know you mentioned mung bean, but I missed if you added something like that. I’ll use gluten free panko, since I also need to be gluten free. Looking forward to trying this, it does look like the ultimate comfort food!
Thank you for for watching the video! I really appreciate it! Regarding your questions. I didn't use an egg replacment. The bechamel sauce is what binds the whole thing together, instead of the traditional egg and milk. As the casserole cools it usually becomes more solid vs loose. The starches from the pasta also help the sauce thicken as it cools, so I'm not sure what it will be like with gluten free pasta (I don't know how starchy the pasta would be). I might make my bechamel sauce a bit thicker in this case. For the bechamel I usually use a 1:1 ratio. In this video I used approx. 2 tablespoons olive oil to 2 tablespoons flour. Heat the oil and then stir in the flour and whisk it until its well incorporated into the oil. Cook for a minute or two and then start adding in your milk. Keep whisking. I used white pepper here, but I have used black pepper (most of the time). I add salt and pepper to taste. I usually use just a pinch of nutmeg, so that would be about 1/8 tsp approximately. As I was trying to make this recipe as close to how my mom made it I didn't add anything else, but when I make this for the family I may add one or more other spices such as garlic powder, onion powder. dry mustard powder and nutritional yeast. I also may add other vegetables such as peas or broccoli florets. I'm going to add this recipe with the various versions to my website soon which will make it easier to read.
