      I watched your video on making gnocchi an then yesterday I made it with leftover mashed potatoes. It was so easy to do! I froze them like you did too. I’m thinking now I will make the sauce and give this bake a try. It looks really good! Thanks Becky!

    I love that you add extra amounts of spices! Most recipes are so bland because people seem to be afraid of the added flavor they infuse into the dish.

      I do a lot of casseroles that use cream of ??soup and they are delicious. It’s nice though to have some great casserole recipes that don’t require the cream of ?? Soup . Thanks for sharing these recipes Becky I’m excited to cook up all of them as they all are easy and look delicious! Blessings 💕

    FYI; I have been making the taco bake for years; I let my kids pick out their birthday dinners and my middle son had picked this one. I write the dates in my recipe books and who picked it. That way I know if its extra special for that child and sometimes the recipe becomes a family favorite letting the kids be involved. Tip: I don’t add the chips because they get soggy and don’t make good leftovers. I just bake the meat & cheese mixture adding the mixture over the chips after. Another advantage to that is if you have to much leftover it freezes well without the chips… by the way we like Frito’s, Sour Cream and Black Olives…it is a versatile recipe.

    I had to tell you I tried your double wrap on my casseroles for freezing. Two layers of foil and 2 layers of plastic wrap. I froze a stuffed shell bake 3 months ago. Thawed it today...it was as good as the day I made it originally. Great technique Becky. Thanks

    Becky, I just wanted you to know how much you inspire me. I have a disabling neurologic condition where my body doesn't always want to cooperate, so good days have to be really productive. I gotta get stuff done while I'm able because I don't know when my next bad day will be. Today on a really good day, I made half batch recipes of your salsa verde chicken and chicken soup base that you made with your sweet MIL in an earlier video. And whilst busying myself, I am watching this video and quite literally made Renee's chicken and rice with you for dinner! It feels nice to know I can still have nutritious food prepared ahead of time for my son for when those not so good days inevitably come. Thanks so much for the canning (and dinner) inspiration!

    Thank you for soupless casserole recipe! I love watching your channel seeing young people living clean wholesome lives successfully. My greatest admiration is how you keep Baby Acre protected from the camera. While I'd love to see how cute he is and how he's growing out of natural curiosity, I'm happy to leave it to imagination. Especially in this day, children need protection by wise parents. Good job Becky and Josh!

    Just made the chicken and stuffing casserole and it is amazing! I will definitely be making this all winter. Like Becky was saying ” it’s like a warm hug on a cold winters day!” Served it with some cranberry sauce. Delicious!

    I hope you do more of these. I absolutely love them. You planned my entire weeks worth of dinners for me with leftovers I can put in the freezer for another time. The crock pot meals you did, I haven't done all of those yet but, the ones that I did make, I made 2 and put one in the freezer for a freezer meal. I have to have 5 surgeries pretty soon and you don't know how much this helps. Thanks friend.

      Cook meats ahead, that always takes the most time.
      Then freeze in meal portions.
      Make your own TV dinners. I do that ALL the time. Freezer veges and sides are the bomb. Fruits, clean & prep those too.
      Planning ahead is your friend during recovery. 😊

    Having a blessed day doing the things I love. Having my grown children over for Sunday dinner all pre- prepped and cooked earlier this week ..skills I learned from you Becky.     I make a similar casserole to the chicken and stuffing but just use thanksgiving leftovers, whatever veggies I have and leftover gravy and stuffing, sometimes I change it up and use leftover mash on the top. Always good.

    I make a taco bake with the meat cooked like you did, but put in picante sauce in the meat and put cheddar cheese and Monterey jack cheese then cover with cornbread on top and bake until golden brown. It is also a good casserole to go into the freezer.

    You're amazing! I'm making the chicken bake for the second time this weekend. Obviously, this was a big hit with my family. My son said, "This is the best dish I have ever eaten!" I think it is the nutmeg that puts it OTT.

    Around mid-September I start to really want a slow cooked casserole, my goto for the first of the year is always oxtail. Then around mid-March I start craving a fresh salad :)

    Hi Becky, thank you for the great ideas! The family thanks you in advance for the yummy supper. Just a suggestion for your parmesan cheese, I personally use a microplane to shred it. It makes the texture more suitable for breading. 😊

    Becky I am Italian. Try making gnocchi with ricotta cheese instead of potatoes. The gnocchi come out much lighter. No doughy at all and much easier.

    You are a phenomenal cook! I love that all ingredients are fresh and homeade. They bolognese sauce with the gnocchi looks so delicious. The chicken and rice wow! I used to cook for a family of five but our sons are grown and married and my husband passed away with brain cancer. So it’s just me now. But I stay hungry for the dishes that you cook. I have gotten better at cooking smaller portions and freezing leftovers if I make the larger casseroles. Thanks for the inspiration! I really enjoy watching you cook and prep.

    I make a really similar casserole to your taco bake too and I can do it three ways! Use the chips as you did for one. Another way is to put the filling in a pan and top with cornbread mix, bake, and top with cheddar cheese., the third way is to add a cup of rice and extra liquid. Keep the tomato juice and add about a cup of another liquid. They are all so different, yet similar and a good change.

    I watched this video yesterday and used your chicken with the stuffing topping as my starting point. The night before, I had mistakenly taken a pound of ground turkey out of the freezer, so I wanted to use that. I substituted the ground turkey for the chicken, skipped the fresh nutmeg since I didn't have any, and used turkey stuffing mix. My husband thought it was wonderful. I had the leftovers from last night's dish for breakfast today, yum! I cooked it in 2 9x6 dishes so I vacuum-packed the second one this morning and put it in the freezer. I really enjoy your videos and meal ideas.

    I actually make a turkey (or chicken) and stuffing casserole in a casserole crockpot that is out of this world, so im looking forward to trying this version - maybe in the crockpot!

    I've been seeing you pop up in my feed and have been skipping over your videos. I was intrigued, but was subscribed to so many channels that I was already having trouble keeping up. I pared things down and decided to click today. I subbbed after the first recipe! I love your personality and your kitchen is so pretty and uncluttered and perfect for cooking in. I'm watching the second recipe now and you just took it out of the oven - another winner!

    Becky you’re so down to earth to watch and you make the best easy and yummy recipes.. I am having a second hip surgery so I have been watching your meal preps and casserole so it’s easy for my husband to help me without be overwhelmed by cooking soo much while taking care of me and my mom.. you’re the best thank you again.. oh..why do you have a pan in the over under the casserole..do you put water in there to steam??

    My husband makes that taco thing at the beginning of the week but uses rotel and leaves out the chips. We just scoop it out and heat and use chips to dip for snacks. So so yummy. All of these looked amazing and I LOVE homemade stuffing but stove top will always have a special place in my heart lol

    cutting up a ton of onion and freezing it has been a life saver for over 10 years for me. im glad you are now doing it. in recipes that have beef or chicken you can always substitute broth for the water. its 1 to 1 ratio. diced tomatoes go in any red sauce recipe.

    The days have been quite cool this week here in central Alberta, Canada. It actually dropped to and below 0C, which is freezing 32F, the last couple of nights. If we had a garden we would have needed to harvest most of it by now. These meals sound delicious.
