      @@biggerbolderbaking After separating the cream from the water of the two cans, I tried to whip the cream manually and the solid separated from the liquid. I heated it up to mix it together again, put it in the fridge and tried to whip the cream up again. It's foaming, but not turning into frosting. What can I do? Thank you

    I just made dark chocolate flavor and I substituted the cane sugar with coconut sugar. It came out absolutely amazing! Rich and decadent for sure!

    Thank you so much. This summer is going to be so much more enjoyable for my daughter. We recently found out that she is dairy intolerant, but her favourite thing is icecream and the shops just don't stock a wide range and it's so expensive. She's going to love this.

      +Elaine Norman Hi, when I first made it I used as much stevia (2/3 cup) and it came out so good, but then I made it again using just 1/2 cup of stevia and it came out much better. 😊

    Hi, I Love the idea of Dairy-Free Coconut Ice Cream.
    As you used 3 cans of coconut milk, it would probably make a huge batch. But how long does it stay fresh/taste good.

    What can I use in replacement for the coconut milk as I hate the smell and taste of it, even if it's mild. Is rice or oat milk okay?

      Hi Ella. Technically you can, but it might not have that natural creaminess that coconut milk lends to this recipe. If you are experimenting, try a nut milk as that might give better results than rice or oat milk.

      Thank you so much for the reply! Unfortunately I am allergic to all nuts, dairy, eggs, and soya. I suggested oat or rice milk instead as these are the only options I know I can have, unless there is another way? I read using corn starch is good for thickening ice cream for a more creamy consistency, perhaps I could use that instead of nuts as rice and oat milk are water based and thus more thinner and runny. Do you know of any other options? 🤗

    I'm allergic to a specific milk protein, therefore I can only eat dairy-free stuff (even bread, cake...). Since I'm in Brazil and we have beautifully fresh passion fruit in our orchard, I'll try this recipe with them. I bet it will be delicious! Thanks so much for this recipe, Gemma! I miss ice cream a lot and this will make my Brazilian summer much happier! :D

      Look up Gemma homemade sorbet. Just replace the condensed milk for coconut condensed milk. :)

    Hi Gemma! I decided today to make your dairy-free ice cream. I was going to make the condensed milk, but instead it came out like THICK CARAMEL (dulce de leche) tasted just like caramel with a little bit of a coconut taste it was sooo good 😍😍😍. Did u know u could make caramel of coconut milk?!

    If you want this recipe to work for you, find a brand of full fat coconut cream WITHOUT any stabilizers or gum. The stabilizers, I think, is what prevents coconut cream to separate. The ingredients list should only have one ingredient (coconut cream).

      I haven't tried this recipe yet, but I wanted to point out that if you freeze the video at 1:55, you can see that the ingredients in her cans are: Organic Coconut, Purified Water, and Organic Guar Gum.

      Sara Kelly Tan or better yet, make it yourself! 2 cups unsweetened coconut flakes and 2.5 cups water in a pot. Bring to a boil then let sit (official recipe is for 1 hour, but I let it sit overnight then I reboil then cool for an hour to get the highest fat content ), then blend in blender until it looks like applesauce (2 min) then strain in cheese cloth or nut milk bag. Makes 1 cans worth.

      I am just making my Coconut Condensed milk, my 2 cans of coconut milk are in the fridge as this is where I always store them anyway, so when you said it didn't work (your icecream ) what part did not work?
      Of course I shall have to await my coconut condensed milk to cool for to be able to use it in the icecream recipe, for which I plan to make Lemon and lime Meringue. .Not sure if it will work out but wondering from your experience of it not working have you changed anything ?

      Good afternoon
      Just wondering if Palm Sugar worked.. (I know there are some issues with Palm Oil Palm sugar and the Palm trees ) so wondered if and how you icecream turned out?
      I normally cook and bake with only Coconut Sugar but found some left over white sugar so have put that into my condensed milk that is simmering away..
      Coconut sugar will be in my next can of condensed milk as it already has a beautiful natural caramel flavor

      @@alicat8687 Palm sugar comes from the sugar palm tree, not the oil palm tree. There is no such thing as palm oil palm sugar. There are no issues with trees.

    This curdled for me. What did I do wrong?
    EDIT: 2nd Attempt a success. Think I whipped for too long the first time. I used Coconut sugar as it is low GI and I am Diabetic so try to avoid insulin spike as much as possible. Coconut sugar gives the Ice-cream a caramel colour and I found the Ice-cream had a very sweet carmelly flavour to it, it was actually sickly sweet in my opinion but I dont have much of a sweet tooth anymore.
    I added
    1tsp freshly grated Ginger, and 1tsp Mixed Spice
    (cinnamon, nutmeg and all spice)
    for a Gingerbread Ice-cream flavour that is sooo delicious. Really you must try this flavour!!!

    I don't know if you'll ever see this, but THANK YOU so much for this recipe. I'm diabetic & allergic to dairy, so I used xylitol to make the vegan condensed milk. I made a batch of mint-choc chip ice cream, and almost cried at how wonderful it tasted! I thought I'd lost ice cream forever, but your recipe is so good.

    You put the cocconut milk on the fridge or on the freezer? I left it 2 days on the fridge and it did not separate at all...

      Ah! Sebastian this is because you bought a homogenized one. When you buy this in the store, if it is cllo, it will already have separated. Shake the can, if you can hear it moving it is the wrong one. Try this. Then check the labels, see the difference. Sorry, this a new problem! :)

    As Rum is an alcoholic beverage and helps in keeping the coconut base from crystallising, I'd suggest making the "Piña Colada" ice-cream a REAL Piña Colada by adding some Rum!

      keep it plain n for texture u can always use coconut in diff forms. either preserved chunks or fresh crushed ones. or chopped chunks of coconut lolly. i usually add chopped lolies in my cream icecream too. n my fav combo is orange n chocolate

      +Natasha McFarlane I would mix in some unsweetened coconut flakes to the batter before you freeze it :) maybe even some coconut extract in place of vanilla (you can find near vanilla extract in most stores)

    Whipped Cream recipe without heavy cream :
    Perfect for cakes and ice creams, made these ice creams with it as well
    Serving 1 cup
    Ingredients
    1) 7/8 cup of 12% or 25% cream
    2) 1/8 cup melted butter
    3) Sugar to taste
    4) Lemon Juice few drops - Maybe optional I don't know
    Method :
    1) In a saucepan take your cream and sugar and allow to simmer for 2-5 mins on low heat.
    2) Let cool down and chill in fridge for half an hour, also chill your whisk
    3) Hand whisk for 5 mins
    And that's it
    Use this as your ice cream base or to decorate your cakes or use it in Gemma's awesome recipes ! Hope this helps and love you Gemma

    Thank you so much for this. I wish I could eat ice cream but it hates me with a passion. I made the vanilla flavored and while it just tastes like whipped cream, its still good and helps with the ice cream cravings.

      Unfortunately, you cannot use sugar substitutes for this one. The process of condensing milk, a main ingredient here, relies on the sugars caramelizing, or getting close to it (soft ball stage). Stevia/splenda will not caramelize.

    Love this my wife is from Philippines, the coconuts actually grow on the trees in the garden unlike cows, looked but can't find them up there. Where's the accent from? living in Ireland at the moment.Just subscribed and posted you on my wife's facebook which is now being viewed in the Philippines, dairy milk is harder to come by, they use a lot of condensed milk. When I saw the green ice cream thought it was avocado which is on my list.

      Hi there, i am happy to hear that you are living in Ireland now! I hope our people are treating you well. Yes, you are right, cream is an issue in hot countries, no cows in the trees! Plenty in Ireland though. I am from Wexford in the sunny south East of Ireland :)

      Gemma Stafford I knew there was a faint whiff of an Irish accent there, gentle as aroma of Vanilla that exudes the air from your ice cream.
      Thanks for replying and yes your people have been very nice to us both ,I'm actually British and come from the Wirral, used to be part of Cheshire , high dairy farming when I was young. My wife comes from an area that's 2 hours drive from a supermarket, that sells real Milk, in 35 degrees by the time your home very nice yogurt.
      However just bought some Alcohol based vanilla based extract, Quiet hard to find in Tallaght Dublin 24, you said it would stop the cream base crystallizing. If not using a extract, would a spoon of vodka have the same effect on other coconut based ices.
      Oh by the way fantastic looking and sounding video, loved the music at beginning.

      Look up a recipe on the internet for a Filipino dish called Halo Halo, you can play with that. A blob of your ice cream on top would be perfect.

      @@biggerbolderbaking Hi Gemma, I saw one comment that said they tried making it with stevia, I asked them to mention the quantity but I didn't get any reply for the same. I've just notice u'v been replying to almost evry comment evn aftr having so mamy comments(huge respect for that) . Hence I'm copy pasting the same comment I had for the person who used stevia as a sweetener .
      My mom is diabetic and I wanna make sugarfree icecream for her. I just have one query if you could clarify please. Can I use stevia powder instead of sugar? if yes, at what stage can I add stevia? As per my experience it gives way more sharper taste than it alrdy has one's it is heated. So when to actually add stevia? And rest all ingredients would be of same quantity ? Can I use erithrytol as wel instead of sugar. Ive heard adding erithrytol to icecream can harden its texture like ice. Is it true. Kindly enlighten with your experience and knowledge.
      Plz reply if possible. 🙏🙏🙏I'll be making this ice-cream for my mom. So it'll be damn helpful. As she rarely get anything good sugarfree items of her choice to eat.
