    This is my first time attempting one of Gemma's recipes and also my first time commenting on RUclips, but I just had to say something! I made the mocha ice cream for my mom for Mother's Day and it was truly amazing! I was cautious about an ice cream recipe that seems too easy to be true, but it turned out exactly as Gemma's version in the video. The only potential issue for some people is that the consistency is slightly different from conventional ice creams: it is almost like a frozen mousse and it's more rich and heavy. However, my family liked that because it stopped us from overeating! My mom was overjoyed that I actually made her ice cream from scratch. I can't believe it was as simple as 16 oz heavy whipping cream, 14 oz condensed milk, vanilla extract, instant espresso powder, and chocolate sauce. I didn't have chocolate sauce on hand so I actually just heated about 10oz semi-sweet chocolate chips with around 1 1/2 cups half and half and it came out perfectly. The slight bitterness of the semi-sweet chocolate balanced so well with the sweetness of the ice cream. Thank you Gemma! I'm never buying ice cream again, there is no need! :)

    Should all the wet ingredients be cold before mixing them in the blender? (the whipping cream, condensed milk... )

      You can use a hand whisk. It will take a while to whip it up but you can do it!

    This is sooo easy and sooo good. We are trying new flavours everyday. We are living on a sailboat boat and using the non refrigerated whipping cream with great results. I put them in the ref a day before then put in the freezer for 4 hours before mixing.

      Dulce De Leche is a condensed milk taken to the caramel stage, but you know this. it has occurred to me that this will make an ice cream when mixed with heavy dairy cream, and it is worth an experiment. I wil ltake a look at this when i get a moment, but you could try it! :)

    I work at an ice cream shop that makes cereal-milk ice cream. Our flavors change seasonally. So far, we’ve had Cinnamon Toast Crunch, and Fruity Pebbles, and we have a flavor called Coffee Almond Toffee (C. A. T. For short), and we’ve got a new lemon mascarpone cheesecake flavor coming soon. We’ve got sooo many other flavors too. They’re the best ice creams I’ve ever had, and it makes me glad I work there.
    By the way Gemma, I’m making your condensed milk for my coffee again. This time, I’m adding a splash of vanilla extract!

    Your ice cream recipe was the first of your videos that I ever watched. I've tried so many flavors and they've all turned out incredible! Mint chip cookie dough, strawberry, cinnamon swirl, hot cocoa, peanut butter pretzel, chocolate almond, peanut butter Oreo, chocolate hazelnut, cinnamon apple... they've all been so good! I'm thinking about trying some fall flavors, because honestly, ice cream season is year-round.

      You really cant. This is cream, which is a natural part of cows’ milk. It is a fresh product, the full fat version of which is known as Double cream and is 35% - 49.4% (Heavy) fat content. This is the one which will whip up really quickly and hold its’ shape.It must be kept cold, it will spoil in a day or so if stored at room temperature. There is no substitute which will work in my ice cream recipe. In some countries which do not have a dairy industry, and these are generally
      warmer countries, this product is very hard to come by. Manufactured alternatives, whilst they may be good for some desserts, will not do for this.I am sorry!

      Yes you can you leave fresh cow milk in the fridge over night in a glas bowl than in the morning up top there will be cream and on the botem there wil be buter milk that you can juse for baking

    I’m late to this ice cream party. I have an ice cream mixer but didn’t feel like dragging it out so thought I’d give this a try. Oh my goodness! Super easy and super creamy! I did peanut butter with chocolate chips but my mind is brimming with all the flavours I can try! Next is the frozen yogurt recipe and I’m guessing it’s going to be just as good. Gemma your recipes never let me down!!!!

    Gemma, this ice cream base recipe is fantastic! I made two kinds today: chocolate chip cookie monster (vanilla cake swirled w/ chocolate chips), and nutella. Both were amazing and oh so easy to make. Thank you so much for a great ice cream base recipe.     Thank you for your recipe, Gemma!
    My mixture curdled (maybe from overmixing??) but I just beat it continuously and after 15-18 minutes, the texture became smooth again.
    I used the base recipe and put some semi-sweet choco chips, roasted walnuts and sliced almonds and some marshmallows. Yum!!!

      I’m sorry to hear that, Jenelle. Over mixing will make the cream split. What is key here is the kind of cream you are using. It should be heavy whipping cream, with at least 38% fat content. Anything less will not work in this recipe.

    Hi Gemma. I just discovered your channel last week. And u have to say, your content is so wonderful and enjoyable (and colorful). I saw how easy you made ice cream and I was like "hey, I can do that!". So I followed your instructions and gave it a try. And the ice cream came out great! I made the basic vanilla.     The marshmallow ice cream one is really sweet but super good! I used 12 smaller marshmallows instead of 12 large marshmallows and it was just right. This recipe also make a lot of ice cream.

    This might come of as really really weird, but I had Salt & Pepper ice cream this weekend, and I just did it using your basic ice cream recipe. Even if you don't make a video out of it, just try it, it is amazing! It's just like salted caramel with a hint of heat in the aftertaste, it is my favorite flavor now.

    Just made your lemon curd flavor ice cream. It is delicious!! I swirled Blackberry puree and put bits of graham crackers and it turned out great!!

    Could you also do a short video on tips and tricks to scoop the ice cream neatly. I make the same base icecream and play with flavors. It's looks soft and creamy while pouring to the tub to freeze and They taste yumm. How ever I'm unable to scoop out so beautifully as it's seen in your videos. It would be great if you can suggest any tips.

      Hi there, the higher the fsat content of the cream, the softer will be the ice cream! Water content freezes like ice, so if you can choose a double/heavy cream it will be softer. Commercial ice cream has emulsifiers added to keep it soft, we need to allow homemade to stand at room temperature for about 20 mins, to soften it :)

    However, I would like to reduce the sugar level...would the recipe still retain its texture if I substitute, say, half of the condensed milk with evaporated milk? Thanks.

    I don’t know if I missed it, but did you mention how much whipping cream and condensed milk we need to make the ice cream base? I want to try this recipe (I even have all the ingredients for the first time in my life) but I’m not sure how much I should add with both the ingredients

    Hi Gemma, I am a big fan and really love your channel. I have made your no machine ice-creams couple times, but I feel as if they turned out too sweet. Is there a way to decrease the proportions for whipped cream or condensed milk (to make it less sweet), but not compromise the creamy texture?

      Thanks for your feedback. If you find these ice cream recipes too sweet, next time try using fat-free or low-fat condensed milk. That will be a little less sweet. Hope this helps :)

    If I were to incorporate a custard base such as with egg yolks and sugar all mixed in on the stove in order to make say a salted caramel ice cream with a creamier texture, if I then cooled the mixture overnight, is it possible to use the stand mixer to beat it into icecream or would I need an ice cream maker?

    Hi Gemma! Is there anyway to substitute condensed milk? With evaporated milk and gelatin/starch, for example? And can I used whipped evaporated milk or milk + gelatin? I want to make these low fat and low sugar for my parents. Thanks!
