I was an exchange student in Japan many years ago and have fond memories of my Japanese family having curry parties....all their friends would come over and everyone joined in to prepare a similar curry and then they all sat down to enjoy it together. This may be an odd point to note, but I love that technique for roughly chopping vegetables, for some reason it's very visually appealing to me. EDIT: Just got around to finally making this dish myself - holy hell that was delicious! Definitely one of my go-to curries from now on.

Looks like an indian curry except for the soy....( i’m an indian ) i have all the powder except all spice pwd will definitely try this. By the way the music so soothing.💤💤
@@vidya6229 nooooo... You could replace allspice with a mix of equal parts of nutmeg, cinnamon and cloves, but it won't be the same. Allspice is not a mix, it's a berry (dried and ground). You might find it in your supermarket as "Jamaica pepper".
LOVE the aesthetics of the video. Just so serene and calming. Can we just talk about the spice cabinet, how perfect it is, how immaculately everything is arranged. Would love to know how your organize it and maintain it. And above everything else the recipe is fantastic! I love the addition of all spice in the spice mix ( I will add it next time in my garam masala - Indian spice mix)
I’ve made almost nothing but ramen since I bought Wils book. Someone help me. Edit: I made a second batch of Wils veggie stock but added sweet potato and it’s so good.

Thanks for introducing Izu, my favorite place in Japan. It also has got beautiful beaches with breathtaking views especially at the time of sunrise and sunset. Their oranges are now in season, absolutely delicious along with many other great natural foods. Your fabulous curry udon is fairly different from the ones we commonly have in Japan as udon being served in Japanese dashi- based curry soup. Your curry udon will be enjoyed at our dinner table tonight! As a Japanese, I appreciate you taking up Japanese ingredients for many of your cooking episodes.

I made this tonight and this was absolutely delicious. Thank you! Edit: I tried the spice mix out tonight as a home made “ramen seasoning” with some soy and a dash of chilli oil. Beyond delicious and really hit that noodle craving!
Love the recipe without the roux. I have been thinking of recreating a whole plant based version for myself and this one is spot on! All I would change when I make this is to add an apple instead of the cane sugar. Thanks for the curry blend recipe (which is much milder than my usual Indian blend)! BTW the curry would be terrific with rice as well (its the way I have always enjoyed Japanese curry).
Same here, I add applesauce to my japanese curry and love the flavor it brings in! I also add a bit of miso paste/soy sauce for the extra umami and top with Furikake seasoning.
I’m absolutely here for more Asian (non-Thai) vegan curries. I like the Thai varieties also I just don’t want to be eating that much richness/saturated fat all the time. I really like your idea to blend the veg into the sauce instead of using flour. That’s a great texture

I made with a minor adjustment: instead of adding sugar, I blended in 2 medjool dates. A nice substitution for those who avoid refined sugar... Also, I wasn't sure what to do with the konbu and shiitake mushrooms boiled for another recipe--they ended up as perfect additions to the curry!
I start mine my roux in one pan to use later. Then I start in new pan by making onion jam. This is one of our fave dishes. Add a tiny bit of cocoa powder and a grated apple to the curry sauce. Brings it to the next level!

so i just made this for dinner tonight and it brought back memories of eating that cubed curry during college with friends and simpler times and i always appreciate a recipe that tastes amazing and makes me nostalgic! i enjoyed it with some extra veggies like broccoli, mushrooms, and zucchini since they needed to be used up and with tofu katsu on top and my my, this made me keeping saying “mmm” every time i took a bite ❤️ will definitely be making this many times in the future. i love that I don’t have to buy the curry cubes anymore ! thank you for this lovely recipe!

Japanese curry is actually Indian curry. British traders bought it over when the country opened itself to trade in the 1860s

I have been to Japan several years ago and traveled around Tokyo, Kyoto and Mount Fuji. Japan is absolutely beautiful so are their people and cousin.

I believe the technique is called 滚刀 (gǔn dāo). Roll the vegetable while making diagonal cuts, great for making chunks out of long vegetables!
