- Egusi soup is one of the easiest things to make! It keeps well in the freezer for weeks and you can just defrost it and have a nice meal with any swallow of choice.
Ingredients:
1. Grounded Egusi (Melon seeds) - About cups
2. One Large Onion
3. locust beans (Optional)
4. Seasoning cubes & Salt to taste
5. Pepper mix (About two cups)
6. Cooked beef
7. Stockfish, Panla fish, Fried Titus fish, Crayfish & Any other protein of fish.
8. Fresh ugwu leaves (Pumpkin leaves)
9.Palm oil

Hello what if I have dry ugu leaves? do i soak it in order to soften the leaves?
Hi, yes you do. You can soak at the start of your cooking and add it in last so it soaks for long. But tbh the dried leaves do not taste like the fresh ones but one just has to manage it especially if you're abroad.
