When I got to eat at goldee's last year, some of the people in line next to me were from Colorado. We got to talking while we waited, then when we got our food we shared a table and ate together. The experience is totally worth it highly recommend
I made a trip to Texas Last month (February) just for Goldee's BBQ from NC. It was 100% worth the trip!!
Did a Houston to Dallas/Ft Worth road trip and ate at 6 Texas Monthly top BBQ spots. Goldee's was hands down the best, Cattleack a very close second.
Totally agree. Did the same. Was a coin flip for me. Cattalacks smoked pastrami ribs 🔥🔥🔥. Both great bbq joints.

I’m a part owner of Rudy’s BBQ and these guys are legit and some of my fav Q on earth. Blacks in Lockhart is my fav and my own q is third to none

I had the pleasure of trying Goldees in February. Incredible! Hands down the best bbq I've ever had.

I was there coming from Germany. Was really great BBQ and was the last guy got something from everything. Afterwards brisket was sold out😊

Goldees does look delicious. The best I’ve had so far is Franklin and that was so damn good. So much Brisket. I loved it.

'best' is relative and subjective. It's daaaaaaaaamn good though. In my top three that I've experienced as a native Texan.

Any reason you didn't mention Ribees or Barbs? Jirby and Chuck were factors in Goldee's success, but you didn't mention them at all. 🤔
As a business standpoint A great taco stand will make more for the owner even the time to make carnitas , tacos de cabeza take way half the tine to make ,Barbacoa etc.
true, but most pitmasters (myself included) who take the plunge and start a biz do it for the passion and craft. We know bbq; especially brisket, has some of the tightest margins in the food world

That place was a lot better when they had their pitmaster Chuck. She went on her own when the owners wouldn't make her a partner.

She learned how to cook briskets from Jirby so i doubt their quality has gone down at all

Maybe Jirby is so busy with Ribbee’s opening that he has no time for Goldee’s. Didn’t think of this.
What is Ribee’s?
Ribbee’s is the new spin off restaurant from Goldee’s. It just sells ribs and sides. The other Goldee’s owner Jirby seems to have taken the lead on on the new restaurant, but not sure.

Dayne’s is gonna win next.
Not with what they served me. Was a terrible letdown. Was glad to see Que back in Aledo where Jerry’s BBQ was years ago. Brisket was good. Ribs were good. But nothing I can’t do at home. Pork belly was great. Sides were pretty but taste was underwhelming. They were super nice folks but the food was not worth the price. 589 Hickory BBQ few miles away in Weatherford is far superior to what Dayne & Co served us. $163 for 5 people better be memorable.

I’m a little disappointed that you did not go back in more detail on its history. No mention of some of the other key “players” at the outset. I.e. Jonny(Jirby). 👎
I was 1 of the 5 original owners. I left after they stopped using mustard on the meat!!!!

I was noticing the thickness of the cuts. The brisket appeared thicker than normal and the turkey was thinner. The typical cut is width of a yellow pencil. Sometimes thicker means it’s overcooked and too tender to stay together so they cut it thicker. Thinner can mean it’s undercooked and is a little tougher so they cut it thinner to seem not tender. Not sure if that’s what’s going on here. I’ve never been there personally.
Honestly I was a bit disappointed. The ribs were good but there’s definitely better brisket out there. Hutchins is way better imo.
Hutchins sucks. Used to be my favorite before covid. And then they hired that wino John Mueller and last trip was our last. Rude. Even the Twinkie’s were dry and overcooked. Damn shame. John’s dead but he took Hutchins good reputation with him.

Agree. But don’t blame them for jacking up prices and cashing in. Got to strike while the irons hot. There are lots of fools out there willing to be hipsters and say they paid $75 for a bbq lunch that is worth maybe $30-35.
