Went there a few years ago, asked the hotel staff where to go, they told me about a place close by (that was featured on that TV show with 3 D's) and also said "don't get the hot, I like hot, but that's really hot!"... so I went and ordered on the lower end of the 13ish heat levels. I probably could have done a level or 2 higher, but honestly that was the best fried chicken breast I've ever put in my mouth! I guess what I'm saying is that they take fried chicken really seriously there, it's worth the wait, and a little spice is always nice.

I don't find nashville hot very hot, but I always thought they should use butter instead as who wants to taste oil straight, but melted butter straight is delicious. Nice to know it works out so I may do that at home if I ever make it, but ill do the cayenne method.
The original hot chicken is from Prince’s restaurant in Nashville. It is just Frank’s hot sauce (which isn’t very hot) and cooked in lard in a cast iron skillet. It was invented by the owners wife who made it as a punishment for her husband staying out drinking late one night. It backfired and it was an immediate hit. 👍
Hot at Prince's or Pepperfire is quite hot and much hotter than what you would find at a normal restaurant. It's delicious. For a real treat, order it extra hot.

Get some ancho spice. It is dehydrated, smoked, and ground Poblano chiles. It has a nice smoky taste and isn't too hot. I don't use cayenne at all anymore.
I agree with spice level. sometimes I just don't understand recipes that are absolutely full of flavor from other spices but then someone adds so much chili that the heat is the only thing you taste when you eat it. when the heat is overpowering all those other flavors are wasted!

if you want super duper super duper thin sliced cabbage you have to use an electric ice crusher (the kind they use for Hawaiian shaved ice), .....it's a round tube with a rotating razor blade inside.......I learned how to do it from my local bar-be-que place that had the best slaw I've ever eaten. ....the ice machine is about 100 bucks on Amazon and you can also make snow cones for your grandkids with the same machine...........creamiest slaw I have EVAH had.

Yeah, don't take your oil straight from the fryer and pour it into your spices. Definitely need to let it chill a bit before mixing it in. Did that once with 300+ degree oil and it just burned the spices and blacked the sugar.

A jilted wife prepared it for her two-timing husband, "accidentally" knocking in a little too much cayenne... but Hubby tried it, and he loved it. And a legend was born. But your version with the Kashmiri chili-powder and the pulverized Fresnos (for the uninitiated, a ripened-until-red jalapeno) sounds like a winner to me. But since I can never find Fresnos at Ye Olde Mega-Mart where I stay, I can go for the next best thing and a personal favorite of mine- canned chipotles in adobo sauce! Never stock the pantry without 'em... and they'll even give ya a little extra smoky goodness! Boy, am I glad my local mega-mart started stocking Kashmiri chili-powder. That's also going to be a pantry-staple from now on.

Instead of the frying grease, it’s supposed to bacon grease. I add butter to it. Also, it’s supposed to be a little bit more thick than that but not much. Also, pickles come with ALL the iterations of the chicken not just the sandwich.

Now if you ate it outside of a sandwich and it's really saucy then I can see Nashville hot chicken being too spicy for some. Even then, depends on the restaurant and how much honey or brown sugar they put into their recipe. Holy B's for me wasn't too spicy
