Classic Chopped Cheese Components:
hoagie style bread
80/20 ground beef
American cheese
Muenster cheese
goya adobo seasoning
tomatoes
iceberg lettuce
pepperoncini
mayonnaise
ketchup
Fancy Chopped Cheese recipe:
Crispy Onions Dredge (soak onions in buttermilk first before coating)
1/4 cup ap flour
1/4 cup cornstarch
2 tbsp onions powder
1 tbsp garlic powder
1 1/2 tsp pepper
1 tsp rosemary salt
1/2 tbsp mustard powder
Homemade mayo recipe:
2 large eggs (100 grams) or 3.5 oz
2 tbsp water (45 ml) this is different than the conversion you find online but it is CORRECT
3/4 tsp Maldon salt
1 1/4 cups avocado oil (295 ml)
2 cloves garlic (8 grams) 0.25 oz
2 tbsp + 1 tsp distilled white vinegar (50 ml)
Blistered Tomatoes:
1 pound grape or cherry tomatoes
1 tbsp olive oil
fresh thyme
fresh or dried oregano
salt and pepper to taste
Truffles Arugula Salad:
a big bowl of arugula
splash of red wine vinegar to taste
extra virgin olive oil to taste
2-3 oz Parmigiano reggiano cheese
dash of truffle oil
salt and pepper to taste

Rosemary salt recipe full batch
1 cup kosher salt
14 sprigs of rosemary stripped
8 sprigs sage stripped
3-5 cloves of garlic (3 if they are big and 5 if small)
1 lemon zested
Rosemary salt weighted recipe
250 grams of kosher salt
8 grams of fresh sage leaves
16 grams fresh rosemary leaves
20 grams of fresh garlic
3 grams of fresh lemon zest

okay, got tired of seeing this making the rounds on all the youtube channels so I made this tonight with my ground beef instead of soft tacos. Holy crap, this hit way harder than I thought it would on the satisfaction scale. I happened to have some adobo chicken seasoning in the kitchen and I highly recommend actually going out of the way to get some and try it. This is much easier to make than a home-cheesesteak and it's pretty darn close second. Thumbs up.
Came for the sandwiches, stayed for the tiny glasses.

Sonny, I hope you see this. My 12 year old son has ADHD and we have had hours of fun & bonding time copying your videos and cooking together. I have one request: could you maybe do a simple video for younger kids, with only a few steps, to finish with a great product? If it is done in your awesome fist bumping, fridge destroying style, I'm sure it would be a home run. Perhaps it could be a separate channel? THAT DUDE CAN COOK - FOR KIDS?

I lived in NYC for 22 years. Chopped Cheese always had the cheese mixed in and never had any vegetables. LOL It was literally fried beef and cheese put through a blender and served on a hoagie roll.

I have made this (non fancy style) many times. So damn good. Try white onion (some uncooked) cooked cherry tomatoes, and BBQ sauce in place of pepperoncini and it'd also insane!

I love using aquafaba for my mayo! Nothing against traditional mayo, raw eggs don't bother me. I just like buying cans of chickpeas for single servings of hummus and would otherwise waste most of the water.
