You can actually dig straight down, just use ladders while doing it so you can keep hanging on the ladder when the block under you get destroyed. Besides that you can get up/down very quickly. Destroy an additional vertical line and add some water at the bottom and you can jump down too (still sometimes a bit risky, because of collision issues with some blocks). Also >always< bring a bucket of water!

They are a fairly recent addition. They were added in the Caves and Cliffs part II update in 1.18 in 2021.
Pewds you should play the alex caves mod, it basically adds 5 new cave mods that contain different diosaurs and other mobs, that can be tamed.
