Made the cheesecakes last night using the digestive biscuits. They are delicious. Even my son, who is a creature of habit and doesn't like to try new things (kept the crust a secret) enjoyed them. He asked how many were 'his'! I managed to get five into the freezer. Thanks for a great recipe Stephanie.
This has become my favourite cheesecake recipe. These mini cakes take much less time to bake and to cool, and aren't as finicky as whole cakes because they don't crack or brown on the top even without a water bath. Better yet I can secretly keep one for my own snacking if I'm serving them at a party. I made them twice the past few weeks, adding flour and lemon juice once to turn them into New York cheesecakes, and had great results both times. Thanks for sharing the recipe, Stephanie!

Yes I love Digestive Biscuits as well. I’m Canadian and Digestive Biscuits were really hard to find when I first moved to the US. Luckily they are now more readily available.

I love doing mini cheesecakes! Depending on what kind I’m doing, I use a pecan sandie, ginger snap, or Oreo cookie (whole) in the bottom for a crust. I also use sprayed foil muffin cup liners...especially for parties. Thank you for your recipe!

I made your strawberry compote yesterday and enjoyed them with your coffeehouse scone recipe. That had me thinking that I have to make a cheesecake to enjoy with the strawberry compote. However, two pounds of strawberries did not make enough compote. It was so delicious and not overly sweet. My taste buds have been telling me that I have to make cheesecake to drown them in the compote. Yes. Definitely will be making thiese cheesecake minis soon. It's so funny that Carrie growls for your attention. My dog stomps her feet.

Omg I made these yesterday and sampled one today; I had to sit down it was so good! LOL. I just bought canned pie cherry filling for the topping but really it’s not even necessary. Was worried about the 300 f oven but it worked!!!

Since it is a bit smaller than your old kitchen island, I would get a rolling cart and put a large plastic bin on it. While you are making your recipe on camera, I would put all my dirty dishes and appliance parts in that bin. Out of camera range. This will keep your counter neater. Love your new hair do!
@Supr Eme Ouch! Home injuries and Knees injuries are serious concerns. Safety measures must be in practice and always checked. My youngest son he is 3, pushed over the rolling Cart into the Blooming Christmas Cactuses; made a mess all around the pantry area. Those rolling Carts are not safe around Children, animals or plants either.
I make mine in the muffin pans.. so much easier and since Cheesecake is rich these are perfect.. I made peanut butter ones with mini choc chips in it drizzled chocolate ganache on top

Little dog was proper cross that she didn’t get some cheesecake. I don’t like cheesecake but they look delicious and especially at Christmas time when there is so much food to indulge, a small portion is a great idea. 💐💐
Hi again, I make cheesecakes and pies for my friends restaurant from home and I always have a little cheesecake batter left over. I freeze the leftover batter and about once a month we serve a ''sampler'' platter when I pull out the batter in the freezer and make cupcake size minis. Try using your favorite cereal for the crust. I like Cap'n Crunch or cinnamon toast crunch. Baking is a Joy. 🍩🍰🍪🍞
I have made cheese cakes following your other recipe I think and they did turned out great. I used digestive biscuits as we don’t find graham cracker here in UK although we do have American aisle. 🙁 It’s nice you have a British aisle and you can find digestive biscuits. 😊

Hello, i found I needed twice the amount of Digestive cookies as the first amount with the half cup of butter did not cover the bottom of the pan. After that, they turned out well. Thank you. Bunty,Ontario
I did add a little flour to my mix. I had read tips on how, to make mini cheesecakes and it said if you want them creamier add a little flour. So I added maybe a tsp or more. They did not crack in the middle.

Here's a great idea from a local pizzeria. Take a piece of frozen cheesecake (square works best). Wrap it (still frozen) in an egg roll wrapper, sealing the edges with a bit of egg wash. Deep fry it till the wrapper is golden brown. Serve hot, plain or with a favorite sauce (strawberry, chocolate, etc.) These make an easy and delicious desert or snack.

We have thought about a portable cart but it's something that hasn't bubbled up to the top of the pile of work yet.

Little dog was proper cross that she didn’t get some cheesecake. I don’t like cheesecake but they look delicious and especially at Christmas time when there is so much food to indulge, a small portion is a great idea. 💐💐

Hi again, I make cheesecakes and pies for my friends restaurant from home and I always have a little cheesecake batter left over. I freeze the leftover batter and about once a month we serve a ''sampler'' platter when I pull out the batter in the freezer and make cupcake size minis. Try using your favorite cereal for the crust. I like Cap'n Crunch or cinnamon toast crunch. Baking is a Joy. 🍩🍰🍪🍞
I have made cheese cakes following your other recipe I think and they did turned out great. I used digestive biscuits as we don’t find graham cracker here in UK although we do have American aisle. 🙁 It’s nice you have a British aisle and you can find digestive biscuits. 😊

I did add a little flour to my mix. I had read tips on how, to make mini cheesecakes and it said if you want them creamier add a little flour. So I added maybe a tsp or more. They did not crack in the middle.

Here's a great idea from a local pizzeria.
Take a piece of frozen cheesecake (square works best). Wrap it (still frozen) in an egg roll wrapper, sealing the edges with a bit of egg wash. Deep fry it till the wrapper is golden brown. Serve hot, plain or with a favorite sauce (strawberry, chocolate, etc.) These make an easy and delicious desert or snack.
