The topping is a deliciously tangy sweet lemon curd. I especially like how the tanginess of the lemon curd offsets the richness of the cheesecake filling.

Hi Joy. I am from Slovakia and i live in the UK. My grandma is a really skilful baker etc and i always enjoyed baking ,BUT i have always found it so difficult to bake in the UK as the meassurements amd ingredients are different (by miles or kilometres as u would say in my country). I was trying to follow the english recipes too with not so much luck. After i found your channel oh boy, love how you say all the ingredients in different meassurements , i finally feel like i can bake. Your chocolate brownie(now my chocolate brownie) is a massive hit. Thank you. U r always my first port of call for anything i want to make. Amazing!!!! Thank you
I am always so thankful that I found this channel because my baking has become so much better! I wish more recipes came in weights! Your voice is so calming when I am trying out new recipes so instead of me getting stressed I watch it again and you talk me through it 😊

I remember seeing a chocolate cake recipe in which raisins were put in a cup of Bourbon Whiskey. The Raisins were folded into the cake batter , baked and frosted . The Taste I can only Imagine. Sounds Delicious. Perhaps Stephanie , Joy Of Baking Can Try This recipe

Stephanie, I tried making these lemon curd individual cheesecakes for the first time, and your recipe works very well. Thanks so much. My family members asked for second portions! The thing I didn't do well was make the cheesecakes rise high when they were baking in the oven (which was about 150C) and then deflate when done. I wonder if i have over-beaten the mixture....
Deflating is normal. I wouldn’t worry about it.

Thank you ma'am for the beautiful recipe - I would try the "veg, no-bake" version by using veg lemon curd (made using milk and corn starch ) instead of the regular one (made using eggs). Best regards !

Love your channel! I am wondering if this can be adapted to be (1)one lemon cheesecake ? I love the individual cake idea, but my fam is looking forward to "a" cheesecake for Easter dessert.
