How to make quick&easy Otsukemono (Pickled Napa Cabbage)

  • 白菜の漬物 Hakusai no tsukemono
    [Ingredients]
    -500g Nappa Cabbage
    -15g Salt
    -1TBSP Vinegar
    -5cm (2inch) Kombu (Kelp)
    -A Dried Chilli pepper
    1. Cut Napa Cabbage in quarters and wash
    2. Chop into pieces approximately 5 cm (2 inches) across
    3. Place Napa Cabbage, Salt, Kombu and Chilli pepper into a Ziploc bag or any clean plastic bag. Close the bag and shake until well mixed.
    4. Pour Vinegar into the bag and gently massage for 1 or 2 minutes.
    5. Squeeze (remove) all air out of the bag and close. Leave it in the fridge for a couple of hours.
