Try this Japanese Vegan Recipe!!
- Takikomi Gohan / Japanese Mixed Rice -
Ingredients For 4 Servings
-360ml /1 ½ cup Rice
-3 Dried Shiitake Mushroom
-⅓ Carrot
-⅓ Gobo (Burdock)
-1 piece Deep fried tofu
-1 tsp Sugar
-2 Tbsp Soy Sauce
-2 Tbsp Sake
-2 Tbsp Mirin
-230ml/1cup Water
-A pinch of Salt
-90ml /⅓ cup Shiitake Dashi
*Water from soaked mushrooms
Prep: Wash/rinse rice until water is clear, let sit for 30 minutes and drain/remove water.
1.Soak 3 Dried Shiitake Mushrooms in warm water (40°c / 100°f) in a bowl, let sit for 30 mins. Cut into pieces after Shiitake Mushrooms get soaked.
2.Chop/cut Carrot, Gobo and deep fried tofu. Soak Gobo in a bowl for 5 mins.

    Bulldog Japanese Worcester Sauce is thicker and sweeter than Lea and Perrins Worcestershire sauce because it uses High Fructose Corn Syrup as it's sweeter while Lea and Perrins Worcestershire sauce uses plain white sugar. I simply add some light brown cane sugar from tate and lyle to Lea and Perrins Worcestershire sauce if japanese Worcestershire sauce is called for. For thickener i use cornstatch which will make the colour lighter and cloudy, for presentation arrow root will thicken and not cloud the sauce or you can use potato statch as seems common in japanses cooking. The Bulldog Japanese Vegetable and Fruit sauce is difficult to find a good commonly available substitute for HP fruity sauce was the closest i could find as a stand alone product, any suggestions would be appreciated. My current effort is to use HP fruity sauce and blitzed branston sweet pickle with some added brown sugar, it has proved popular with the family. You can find the authentic sauces online at amazon and others at a price, i bought them there and am still trying to copy there unique flavours from a unique country.
