Actually you are wrong. It was never offered to Whitney Houston but was intended for a Norwegian named Slssell but was decided to use Celine who didn’t want to do it but her husband talked her into it. The demo was actually used and Whitney was never in the running for this song.
Celine Dion management really wanted to create a memorable soundtrack like Whitney did with I Will Always Love You. They tried to do it with Because You Loved Me. It's the memorable song but not for a movie. But then, they saw My Heart Will Go On has a potential since Titanic is a huge movie. So, her late husband convinced Celine to do the demo even Celine didn't like the song at all. During the demo, Celine drank a black coffee and go straight for a demo. The whole studio is so moved by her performance and even James Cameron agree to put this song as a soundtrack after hearing the demo. Celine said in the interview afterwards that she glad her late husband convinced her to recorded a song.
