    I like your recipe I was wondering if you've ever added bean sprouts to your fried rice? It also look to light maybe more soy sauce. Or dark soy sauce.

      I think traditionally you would use Asian cured hams, but they're hard to get in the west and bacon is similar

      You can use char siu. The best japanese fried rice I've had is cooked in ramen shop with ramen char siu.

    About 3/4 of the way through the smoke alarm in my house would have gone off, ending the cook. And I wonder why I don’t bother going for wok hei in my home cooking ?

      This recipe is just a version of Yakimeshi, it's perfectly fine to modify it to your taste or needs, food is about combining techniques and flavours, be creative! Not everything needs to be cooked in some traditional way at all times.

    My mother was born in Japan, raised in Japan and I never once saw her use dashi on rice, gigantic green onions like that, bacon in fried rice, a wok etc… You’re hilarious! Just because you throw dashi on rice doesn’t make it Japanese😂

    Good lord man. All you are doing with that ladle is mashing the rice into mush. That’s horrible! Then you cook the green onions like crazy. Now they are slimy and gross. They go in at the very end. This is a huge mush mess. Fail!
