With leftover pork loin for the added protein, and baby bella mushrooms and small broccoli florets (of course the onions and peppers), this recipe was absolutely fantastic ! Thank you !!

I'm doing this like 2 to 3 times a week. But i recommend sushi rice. I usually have leftover sushi rice in my fridge, so i can go for it whenever i feel the need for egg fried rice. I prefer the gold over silver method a lot. There's not really a recipe for it. The ingredients change, depends on what i have in the fridge. But i always start with my main aromatics: garlic, galangal, onion and sesame oil. When the onions are golden brown i add some red thai chillies and the rice, that i marinated with egg. Right at the end of the cooking process, i add some finely cut spring onion and a splash of Kikoman Soy Sauce. Perfect if you have some Lao Gan Ma to give it a really special flavor!
Can’t wait to give this a try! Also dying to learn more about the chicken ‘chassile’ but can’t find it. No doubt I’m spelling it wrong! Can you point me in the direction?

I like mixing my eggs with the rice, it's a good technique for golden fried rice, however I only mix with the yolks. I use the whites to scramble and add to the fried rice.

I take an empty milk carton, open the top, crack an egg into it, and then add my leftover rice and shake it until every grain is coated. Works every time.
My mom makes fried rice like this. Dad and I call it lazy because she saves time throwing in rice and egg at the same time...result is soggy rice. Special indeed 😂
I used a large cast-like pan. It came out excellent. Chile flakes, Soy and oyster sauces , sesame oil, extra onion - chopped and fried No peas or carrots, no leftover meat, no prawns, no hot oil, no salt.
Isn't 'marinading' the rice the same effect as chucking the mixed egg in _after_ you've been frying the rice ?? I find that doing that coats the rice grains better anyway rather than the traditional method ??? What do I know 'though, I'm Scottish 🙂🙂
Letting the rice sit in the egg allows it to be absorbed slightly, rather than frying it first and then adding the egg. You get a completely different texture! - Lee

Wok hei is understanding the woks air, and how to regulate the temperature of the wok. It still has the smokiness as you use a high heat which creates the smoke. The peas are for colour and texture, also adds a nice sweetness! - Lee

You can still make it with a normal wok or large frying pan as someone else has said to you! We we're using a cast iron wok because we had it on hand to use! - Lee

I made it ... outstanding! For protein I simply cooked chicken with typical stir fry marinate and nothing more, and WOW everybody loved it.

I think it lacks the wok hay because it's made on induction stove. And why the peas?
