- Join Claire Saffitz in the Bon Appétit Test Kitchen as she attempts to make gourmet M&M's. M&M's are available in just about every color known to man, but there is one color that is objectively the best: green. Scientists have puzzled over this curiosity since the inception of M&M's in 1941. MIT Professor of Cognitive Sciences Dr. Bertrand Mathers has dedicated the entirety of his postdoctoral studies to this conundrum, labeling it the Green M&M Dilemma. With the dedicated assistance of researcher Loretta Marshall, Mathers has finally unveiled his ultimate theory on the subject. “After more than fifty years of sleepless nights, proposed and rejected ideas and quite a few cavities,” Dr. Mathers read from a lectern at an August 15, 2019 press conference, “My life’s work has finally reached its culmination. I have found the solution to the Green M&M Dilemma.” Dr. Mathers, never one to skimp on dramatics, spun around to face a chalkboard covered by a red velvet curtain. Pulling it aside, he revealed his grand solution: ‘The color green is the best color, so therefore green M&M’s are the best M&M’s.’ A stunned silence in the crowd was quickly following by a standing ovation lasting over five minutes. Finally, as the applause died down, Dr. Mathers, red-cheeked and clutching a bottle of celebratory champagne, added: “And now we begin our studies into why blue M&M’s are definitely the next best M&M’s!”

I love that she tried the Thai coconut, hated it, and immediately knew she had to have everyone else try it too
For what it's worth, I remember having a biology professor tell me that the innermost layer of the candy coating of M&Ms is actually diatom powder used to help the candy adhere to the chocolate and stabilize it like a primer. That's why when you dissolve a M&M it'll still have a thin layer that doesn't melt away with the rest of the candy.
EDIT: Also, caranuba wax for the shiny polished surface.

I feel like Claire gets too bogged down on trying to visually replicate things. I feel like it should be a gourmet version not an identical replication. I love her though and she always does such a great job.

I just feel she makes tempering chocolate so much harder than it needs to be... melt chocolate, seed the molten chocolate with chocolate callets until you're at the right temperature, done perfectly tempered chocolate. Why does it work? Because callets already have the required crystals in them and they multiply in the chocolate you add them to.

I was imagining Mark Rober coming in and designing a tumbler to perfectly coat the candy.
A few airbrushing tips that hopefully might help you, Claire, or anyone else attempting this at home:
- Lower the PSI on your compressor when you're using an airbrush. It was way too high from the looks of it, so that's why you got all that overspray going on. If your PSI is too high it will also make it harder for the paint to stick properly to the surface
- Have a bit more patience when applying color to something: You kept turning the M&Ms before the paint was dry, so that leads to that uneven coverage you were getting. Do one side, wait for it to dry, then turn them and do the other side.
- To get a smooth coverage when you paint, you should apply multiple (hopefully thin) coats of paint. That should cover up the fact that your undercoat (the white sugar coat you had) was uneven
Granted, I've never used food paint through an airbrush; these are more from someone who paints with an airbrush so they may not apply at all :) I can't imagine that they wouldn't help, though, so maybe someone will find this useful!
Great advice! Also I think she should just mix food coloring with vodka so it exaporates more quickly than water.
Having a smooth brushing motion would help too. It looked like Claire was spraying the coating on rather than brushing it.

Ok, but why haven’t you guys gotten Clare one of those little home chocolate tempering machines?!
I was a chocolatier for s few years before going full time mom. The right equipment makes it super easy, but that sou vide setup isn't that ridiculous. With the bags sealed that way she doesn't have to worry about the other people in the kitchen messing up her temper. It isn't just the pan temperature you need to keep constant, the humidity and room temperature matter a lot. The darker the chocolate is the faster it sets and the more finicky it is. Walking past cooling chocolate with a pot of boiling water in a kitchen can ruin an entire batch. I made chocolate in the dining room while everything else, including drinks, was well away from me.

That white layer is starch. At the factory, after the chocolate drops are unmolded, they are put into a tumbler, sprayed with a layer of starch then a layer of colored candy coating, all while being tumbled. The tumbling action initially polishes the chocolate drops and removes any skirt or seam from the mold, then when the candy coating is applied the tumbling/polishing action shines the coating. The starch serves two purposes. It initially keeps the chocolate drops from sticking together as they tumble, then it helps the candy coating adhere readily.
Yup. The coloring is a simple candy syrup make of water and corn syrup with coloring added, then a finishing spray. She was almost on the right track with the layering, but she could have mimicked it decently by taking the stand mixer's bowl and swirling and shaking the candies in there by hand.
They're also finished with carnuba wax to make them shiny (it's right there in the ingredients).

I think the one thing that tends to get forgotten is actually making it gourmet (better), it doesnt need to be a visual replica of the entire product but has the essence of the original and tastes better. Really like the series and how claire is kinda a goofball, just wish it the item was more reinvented to become gourmet

Melly Reed it’s because we enjoy their content. We love watching the method, but the chaotic energy is what keeps us coming back so they provide as much screen time as we love. Also, RUclips’s algorithm works well long video so it’ll come up in more people’s recommended. Btw, they choose how many ads per video. Compare 4 ads in a 40 minute educational video to The Ace Family’s shocking 16 ads in 1 hour video. It’s all choice

Chris also knows how to give good criticism, as in, tell people what's wrong in a genuinely helpful way. And more importantly he knows when his criticism is helpful, and when it would be destructive, and when to bring the sass. Add in his super pallet and I begin to understand why everyone in the test kitchen respects him and his opinion so much.

That would be cool, but I doubt she'd get to see anything useful. Making this stuff is basically all done by machines and robots and they may not reveal everything because of company secrets, like exact recipes and such.
