- Join Claire Saffitz in the Bon Appétit Test Kitchen as she attempts to make a gourmet version of Hot Pockets!
Everybody remembers where they were on that day in 1983 when Hot Pockets first appeared. It was a giant leap into the future. A miracle some called it, for nobody could seem to say where the Hot Pockets came from. They just existed. Food, and therefore humanity, would never be the same again. The efficiency, the culinary explosion, a modern miracle that truly served as an evolutionary step for all of mankind. An entire meal in a pocket that you could hold in your hand. Joy in the streets was met by existential dread. Where could humanity go from here? Had we truly reached our civilizational zenith? Religions formed over night, some might even say cults. But then a second flavor appeared. And then a third. And now over fifty, each richer and more complex than the last. Since that day in 1983, humanity has been on the precipice of our next phase of being, but for one obstacle in the way. How are you supposed to eat a Hot Pocket without burning the hell out of the inside of your mouth? I mean, come on. It’s crazy hot, but it’s seriously impossible to wait just five minutes until it comes out of the microwave. No, I need it now. Give me that Hot Pocket.

My thoughts going into this: Oh, this will be easy for her! Then I saw the video length and thought: Oh man, something really went wrong.
Does Jim Gaffigan know about this ? Gourmet "Hot Pockets" or "Gourmet" hot-pockets ? 'cuz you can't have both , they are eternally mutually exclusive concepts. A true Gourmet Hot-Pocket would surely destroy space time continuum AND completely upend the fabric of society as we know it. These people are maniacs ! All be it talented and creative ones.
She actually did make an amazing gourmet version on the first day, and then dialed it back to make it more like an actual hot pocket.
"I already know how to make these" said Claire, with 40 minutes of video left
To be honest, her day 1 results were a gourmet version and looked the most appealing. Granted it wasn't a direct visual copy, but arguably it was a gourmet version of what a hot pocket is. Her next 3 days of revisions were attempts to replicate the look - though amping it to 7 cheese was a nice "f you" to the failures along the way.
I'd argue the first version was the best version
It is supposed to be "GOURMET" hot pockets .. NOT keep trying to get it as cruddy as the original ... * sigh * Repeat after me : Gourmet.. Gourmet... Gourmet !! She nailed it on the first day..

I just made these yesterday and they are AMAZING! I think I might have overdone it on proofing the dough because they did puff up a bit more than I thought, but they were delicious. I also used the same amount of cheese but instead of using 7 cheeses I just spread the cheese ratio to 3 cheeses. I didn’t have a single cheese explosion and the dough was so amazingly flaky. I’d highly recommend doing this if you love hot pockets
