Is it the cheesecake or the strawberries that are runny? A couple of things is possible, the heavy cream can be over mixed or under mixed. Also, make sure the heavy whipping cream is cold, straight from the refrigerator before whipping it. For the strawberries, the longer they sit in the fridge the more juice the sugar will draw out. Try marinating them for only 30 minutes. Let us know if this helps.

About 3-4 minutes using an electric mixer but if you’re doing it by hand about 7-8 minutes. However the time may vary.
