*Best-Ever* No Bake Strawberry Cheesecake 🍓 (So Smooth & Light!)

- This no-bake strawberry cheesecake tastes like no other - the cheesecake filling is incredibly light & fluffy while holding its shape perfectly when slicing it. Give it a try if you are looking for a make-ahead dessert to "wow" your guests.
📌 Ingredients To Make No Bake Strawberry Cheesecake
For 9-inch pan
Cheesecake Crust
• Graham cracker: 200 g (2 US cups)
• Granulated sugar: 26 g (2 Tbsp)
• Unsalted butter: 100 g (7 Tbsp)
Cheesecake Filling
• Gelatin (Bloom 230): 7 g (1 pack of Knox gelatin powder)
• Icy cold water: 30 g (2 Tbsp)
When using gelatin sheets, soak them in icy cold water and leave them for 10 minutes.
• Cream cheese: 450 g (2 8-oz blocks)
• Sour cream: 80 g (1/3 US cup)
• Granulated sugar: 133 g (2/3 US cup)
• Lemon juice: 20 g (4 tsp)
• Vanilla extract: 5 g (1 tsp)
• Heavy cream: 420 g ( 1 3/4 US cups)
Strawberry Topping
• Fresh strawberries: 450 g (1 pound) (cut half in small cubes and the other half in half.)
• Granulated sugar: 66 g (1/3 US cup)
• Cornstarch: 5 g (1 1/2 tsp)
• Lemon juice: 15 g (1 Tbsp)
Whipped Cream
• Heavy cream 180 g (3/4 US cup)
• Granulated sugar: 20 g (1 1/2 Tbsp)
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **

Tip - for greasing your baking pans I either use a small knob of butter ( not really cold 🥶 but not too hot) and i just use my fingers to apply the butter it gets into the corners of your pans or don’t throw away the butter’s wrappers , using the butter wrappers apply it all over your pans/ make sure you get into the corners, Aussie gal is in the kitchen with Aya and I’m having a blast 💥 ❤

Another setting agent for a no bake cheesecake is pure lemon juice as soon as the lemon juice is added to the cream cheese and mixed together it starts to set and if there’s anyone who like me that doesn’t like gelatine set cheesecake mouth feel try lemon juice fresh is best ❤

It might! For 2 layer cake, I insert poles inside, such as wooden cake rods. Then it’ll work for sure! 👍🏻
@@PastryLivingwithAya ok the dowel wooden rods??? Not a tiered cake though….its one cake (the cheesecake in between 2 pink strawberry layers). I have made it with baked Cheesecake before but i haven’t made a no-bake cheesecake.
Im no baker by all means but I wonder if freezing the cheesecake would help with structure when you’re putting it together? I think it’ll be fine once it’s encased and the cake layer on top shouldn’t be too heavy I would suppose. If you do end up trying it, please do update! I would love to try it out too

Hi. Can strawberry flavored gelatin be used instead?
I'd never tried with it, so I'm not sure, but I recommend using unflavored gelatin for the best result.
