I made this for a baby shower in tall plastic skinny cups. I also cubed the pound cake. It was a huge hit with kids and grownups!! It also stayed good in the fridge for several days (covered).
Years ago, I made a strawberry/pistachio pudding parfait. My father loved it. Next time, I made a chocolate/chocolate parfait and my mother loved it. In parfaits, we are limited, only, by our imagination.
I always cube my cake to make it easy. You can just drop the pieces in per layer. Also for pudding mixture I use a 1/2/ ratio of softened cream cheese to cool whip and add a couple tablespoons of vanilla pudding mix (out of the packet). Let it set up in the fridge and it's amazingly awesome.
For a neater look, you can put the pudding in a piping bag (or a zip lock bag and cut the tip). It helps control where you put it to avoid hitting the sides and blending layers. Just putting that out there.
I do a similar recipe. But, instead of pudding I use a combo of cream cheese and whipped creme mixed together. To me that tastes better and is lighter for the summer. And I might use lady fingers or more likely angel food cake instead of pound cake, because it too is lighter. I also sometimes layer with a layer of strawberry and a layer of a different berry like blue berry or perhaps banana instead of just all strawberry. Depends on what I have on hand.
Yep! You can either use whole frozen strawberries and once thawed, do like what I did or you can skip that step and use the frozen strawberry pieces in sugar and juice straight out of the container. Either is fine and both are equally delicious!

Thank you! They are split between me and my roommate. The leftover pieces of pound cake were snacks for us and Bruno, LOL!! You could if you wanted to and had leftover strawberries, pudding and whipped cream, just cube them and add them to jars as well for more parfaits!

Actually, they'd probably be just fine if you made them ahead! If you made sure the pudding and whipped cream was spread to the sides of the jars, the strawberries wouldn't get to the pound cake to make it soggy. Even letting a couple sit overnight in the fridge, mine were fine. Another thing you could do is just make 1 layer of cake, 1 layer of pudding and then when you get there put the strawberries and whipped cream on top. The best part is the jars have lids for easy transport!
No. Granulated sugar is just regular white sugar. Icing sugar is powdered sugar and is a blend of superfine sugar and corn starch (not what you want here).
