Arlene, would you believe only today I made oil down with pigtails. I wanted to mention this before I watch the way you'd make it. I also love Crab and Dumplings etc, lol. Love and God bless! Arlene I'll like to add to this comment. I watched your video, and I use the same ingredients as you did, but the only difference is, I'd usually peel and cut the breadfruit, boil my pigtails with a little lime juice, drain it, and set it aside. I'd heat a heavy bottom pot with little oil, then add chopped garlic, onions and pimentos, sauté that a little, then I'll add the chopped dasheen leaves and all the other ingredients that you've used, cover it and let it cook. I sometimes make it with salted Cod fish (as we say in Trinidad, saltfish) or freshly catched fish. When I'm using the saltfish I boil it but not as long as the pigtails, and then I'll fry it before adding it together with all the ingredients to cook. When I'm using freshly catched fish, I'd wash and season the fish, and let the breadfruit cook a little with the coconut milk before adding the fish, because you don't want the fish slices to be broken up. I also love Fish Broth, and Crab and Dumplings, whenever I make Crab and Dumplings, I do it together in one pot, and to my knowledge, it's something that ONLY a few Trinidadians do; most of my relatives and friends would make their Curry Crab and Dumplings in separate pots. Many of us do things very differently so it's good that we all can share, and if possible, learn things from one another. Love and God bless!

Oil down is oil down, there is nothing called Trini Oil Down. I hope what you are not referencing those dishes looking like soup on RUclips. I am a Trini and I cook how it should be cooked not soup
grenadians oil down not suppose to stir and the callaloo/ dasheen leaves cut up to small this isn't oil down more of a steamed down i'm sure it taste great just the same way however just quite different!
One comment on plating.....if your dish is lightly coloured then maybe you should plate in a more colourful dish to offer contrast. Now if I send my name and address could you FedEX some of that to me in Miami?

Hey I'm sorry you didn't have a good frozen breadfruit experience. I've done it for years as it's seasonal . It's important to catch it at the right time.. not ripe but not green either. Just as we say full... in the middle kinda like the time to eat a perfect avocado. I hope you have better luck if you try it again. Happy cooking
