      I used to do knife skills classes at a restaurant supply store and.. wow talking to a class of people (ie. a camera in this situation) is a lot different lol. Pretty sure I've cut my thumb/nails countless times on the simplest cuts many times.

      Are you talking about teppanyaki or hibachi, because they’re two different things.
      Teppanyaki is done on a flat top, and hibachi is cooking over coals.

    I am stuck at home trying to make meals out of all the food staples I bought for this time of self isolation. Your passion for food is so inspiring, and I love your voice and your sense of humour. I don't have bacon or avocado, but I added diced Granny Smith apples to my tuna melt and a dash of lime juice as well. Topped it off with extra old cheddar. I have subscribed to your channel Sam - you have brightened my day.

      Mayo in many foreign countries is, in my experience, far better than mayo from the US. Not sure why that is, though. Mayo from the Netherlands is by far my favorite.

    Suggestion on the avocado: instead of using slices, use it as a _spread_ on the other side of the bread, just smoosh it on there with a fork. It makes things stick to it, and helps anchor the bread. Believe me, I learned this after MANY sandwich mistakes. I gotta try that bacon + flour thang. Also heard baking soda does the same thing - helps makes things crispy! Kinda like your thumb, LOL.

    Looks amazing! :)
    The only things that I do differently is waitng until the cheese has melted (both halves separate and covered with a lid or dome) then building the rest with the vegetables (including adding salt and pepper on the tomatoes) and putting the two halves together at the end. This is just to keep the avocado and tomato from getting warm. Unless you want warm avocado and tomato; if you do, then then do that. 🤣

    Hey Sam, I finally found Kewpie mayo at Costco and I have to thank you for all the times you promoted it’s deliciousness. I make grilled sandwiches using Best Foods mayo but the Kewpie far exceeds BF. Kewpie, it makes all the difference. Can’t wait to use it for deviled eggs.

    Dredging bacon not only gives it an amazing texture and flavor, it also makes it so it doesn't shrink very much! You can also season the flour with what ever you might not usually think of like a little cayenne or garlic powder etc. Mmm mmm mmm!

    Samthecookingguy: If you burn your finger like that again, immediately take that finger and pinch your earlobe, and hold it there for a few seconds, as it will absorb the heat and pain. It works, and is not a joke. That sandwich looks amazing by the way! Thanks for sharing.

    Skip the steamed tuna. Coat your Tuna in sesame seeds, sear on all sides in a screaming hot pan, till the seeds are toasted. Throw the tuna in the fridge to cool down real quick. Nice, thin slices of rare, sesame crusted tuna. Layer that on that sandwich and smother with the mayo dressing. This coming from someone who hates fish but loves sushi.
    Also, chz goes on the bread side, both sides. Melt the cheese, keep the tuna and avo cold if you can. Roasted/broiled tomatoes with the chz would be crazy.

      @Ron Wake Grilled tuna, quickly seared, is great too. Again, I hate most fish, but raw Tuna is something I do. You do it how you like it. I learned this with the sesame seeds, we would use those cast iron fajita plates you get in restys, and it's real cool. No reason it wouldn't work in like a decent non-stick.
      You'd have to play with it a bit, till you learn how to prevent the tuna from getting too soft so it keeps its shape, and then getting good at cooling it down enough so you can slice it nicely.
      If you went the grill route, s+p with some squeezed lemon would probably be great. You could even rub the tuna with a touch of lemon juice, oil, little bit of some chopped herbs you like. Let it sit for 10 min before you throw it on.

    I'm going to try it but I do think that you forgot one important thing. I use to be a Cook at the Sizzler's and when we did our ham and cheese sandwich we would mix parmesan cheese with whipped butter for the outside crust. By doing so it'll make the sandwich more cheesy and it gives it a beautiful crackled look that will make it even better. I hope that you try it and then you'll understand. It's amazing.

    My Grandmother never cooked bacon without flour. Been using that trick since i was a kid. Great idea from the Evo guy!!!

    Sam, how would the tuna be improved if you did a confit in olive oil?
    If someone offers a tree-ripened avocado, call BS. Avocados do not ripen until they are picked.

      To do a confit, you'd need to cook the tuna in tuna fat/oil.

    A friend of mine had a restaurant and on his lunch menu, he had a sandwich with a seared tuna steak, wasabi mayo on a brioche bun, I loved it.
    If you’re making a tuna melt, shouldn’t the cheese be melted? I’d put cheese against the top and bottom breads and plié all the other ingredients between.

    When I cook fresh tuna at home I wrap tuna chunks in bacon and top with 50/50 mayo,sour cream sauce season top with a litttle jack cheese. Old fishermen recipe. and whats left over I make tuna melts with. everyone loves them.

    Did this before but I grilled the tuna and it was blue fin. I almost fell out of my shoes it was so amazing. Nobody try and kill me because I used Bluefin Tuna but I had so much of it there was literally nothing else to try. I had left over steaks I grilled so I mashed them up and made a tuna salad it was insane.

    Yum. Made that sandwich today. I didn't have a tomato but wow that tuna with the dill and onion is a winner! and the mayo on the bread instead of butter was good. I didn't put on cheese but used an asiago/parmesan bread and it was perfect. Great recipe thanks again!!!!

      Absolutely!! That would be awesome. But I guarantee the "F" bomb would be dropped so often Sam would have to show a disclaimer before the actual cooking started so he wouldn't lose any of his regulars. I wouldn't care but some would be offended. Guaranteed!

      Don't know the brand but it appears to be 8 inch santoku style knife which is indeed a Japanese style

    We tried our version tonight with a few small changes due to it being spur of the moment and not having everything needed. The biggest of out changes was to smoke the Tuna then grilling it with a salmon steak. We used both the salmon and Tuna. Love your videoa and watch as often as we can for dishes that we can try our hand at. Thank you
