    Millets are a healthy source of various nutrients. In this recipe, I am using Foxtail Millets in place of rice and making it a healthier breakfast option.
    Prep time: 6 hours
    Cook time: 10 minutes
    Number of servings: 4 persons
    Ingredients
    Foxtail Millet - 1 cup
    Urad Dal - 1/4 cup
    Fenugreek seeds - 1/4 Tsp
    Poha/Beaten Rice - 1/3 cup
    Water
    Salt to taste
    Oil/Ghee

    Method
    1. Soak the millet for 6 hours
    2. Soak the urad dal with fenugreek seeds for about 6 hours
    3. Soak the beaten rice for 30 minutes before grinding
    4. Grind everything to a fine batter and mix well together
    5. Add salt and let the batter ferment for 6 hours
    6. After fermentation, pour a ladle of batter on the tawa and start making the dosas
    7. Serve the Millet Dosas hot with sambar and chutney

    Never discard the soaked water from millets... It's very nutritious... Also, you can make the same dosa without adding rice... Wishing everyone healthy living...

      Soaked water should be avoided. We are soaking 6hr to remove some acid kind of thing so avoid the soaked water

      ​@@alwinchoco6977 millet soaked water is very nutritious.we should throw the water if we soak lentils,nuts and seeds but we should use millet soaked water.

      It is important to throw the water (or put into plants). The reason is, it has phytic acid which inhibits absorption of nutrients in the body.

      Soaking is for removing phytic acid layer to prevent bloating and gas issues.. it is advisable to discard the soaked water and rinse once more and then grind

    Madam good recipe. To make bottle guard dosa, can we make a paste of it and add it to the dosa mixture and leave it to ferment for six to eight hours?

    Thank you, Madam for such a great recipe. According to Ayurveda cooking and Dr. Sarala, the water where the millet is soak should be used for boiling/cooking the millet. Thank you again for such a detailed recipe and clearly explained instructions.. Pranam

    Did you skip the fermentation process by adding baking soda to the batter? I say this because, i make fermented dosa every other day. The batter does not bubble up like that when fermented. Just asking

    We prepared your paneer butter masala very nice and easy your explaining with speed so we are not able to write Millet dosa we will do tomorrow some other cooks said that instead of aloha use Iddli rice

    Prepared this today using bajra and the taste was amazing. Somehow I couldn’t make thin and crispy dosas, not sure if it is bcos of the tawa or the batter. But the taste was very good. Thank you

    Thank you for sharing this recipe. The dosa came out perfect crispy and best part healthy ❤. This tastes very similar to the normal dada i dont think I will make the normal dosa again.
    I was wondering if we could make idli out of the same batter or the proportion vary.

      Have u fermented the batter if so how long?I fermented for 8 hrs it became sour.

    I make Sama rice fasting dosa.
    But if I don't use rice /poha or urad dal and just soak sama rice for 5-7 hours and then grind it and allow it to rest overnite will it ferment ?? For fasting I can't add eno, or baking soda too. So please advice

    Hi hema tried this recipe taste was good only thing is batter got sour I grinded at 8pm and used it in the morning at 8am is the fermentation period is more.Pls guide on this.Without fermantation can we use it?ALso I added salt when I was about to pour dosas.

      In this case you can keep the batter vessel inside another big vessel which have normal water.
      This is the traditional way. My granny used to keep the freshly grinded batter like this to avoid over fermentation and it works too.

      If you do not see any dark fungus spots, it is good. Usually the fermented batter smells a bit bad👍

    Hi. Just wondering after adding the blended rice (poha) to the millet urud mix, if we leave it aside for less than 6 hours how will it affect the final outcome? What will be compromised? Everything 6 hrs takes too long.
